Diabetic Diet Recipe: Green Pea and Split Pea Soup
Ingredients
1 cup chick pea
1 cup green pea
¼ cup mint leaves
1 teaspoon fresh marjoram leaves
5 spring onions (sliced)
3 cloves garlic (minced)
4 cups chicken broth
1 teaspoon vegetable oil
1 tablespoon low fat yogurt
One pinch each of salt and peeper
Procedure
Take a large sauce pan and heat vegetable oil. Add spring onions and garlic and fry for about 2 minutes. Pour chicken broth and add the remaining ingredients - chick pea, green pea, mint leaves, marjoram leaves and salt. Bring the mixture to boil and shimmer for about 25 minutes. Blend the soup in a mixer for 2-3 minutes. Again pour the mixture into the saucepan and heat for about 5 minutes. Serve the chick pea and green pea soup with yogurt and pepper.
Diabetic Diet Recipe: Lime Chicken
Ingredients
4 chicken breasts halves
Juice of 2 lemons
1 tablespoon unsalted butter
½ cup white wine (optional)
A pinch of black pepper
Procedure
First of all, cut the chicken breasts into thin slices for about 1 cm thickness. Add lemon juice and pepper to the sliced chicken pieces and marinate for about 2-3 hours in the refrigerator. Then, heat a frying pan and melt the butter. Saute the marinated chicken pieces by turning occasionally, until they are cooked well. Meanwhile heat the white wine on a saucepan and pour over the cooked lime chicken. You can serve this chicken dish during the main course of the meal.
Diabetic Diet Recipe: Fruit Salad
Ingredients
1 medium sized mango (peeled and sliced)
1 pawpaw (peeled and sliced)
2 kiwi fruits (peeled and sliced)
1 tablespoon fresh mint leaves (chopped)
¼ cup of apricot nectar
2 tablespoon lime juice
Procedure
Take a large bowl and combine together the ingredients - apricot nectar, lime juice and mint leaves. Stir well and add all the fruit slices. Toss well the mixture and refrigerate for about 45 minutes. Remove fruit salad and serve it chilled.

One word of advice is to eat smaller meals for several times a day, rather than consuming heavy meal at a time.
