Recipe #1: Snowflakes Brownies
Ingredients for 20 Brownies
- 6 eggs
- 1½ cups + 2 tablespoons all-purpose flour
- 13 oz dark chocolate
- 9 oz white chocolate chips
- 12 oz sugar
- 13 oz unsalted butter
- 1 tablespoon vanilla extract
- 1 teaspoon fine salt
- 2 tablespoons powdered sugar for dusting
Before we start making the brownies, preheat the oven at 350ºF. Take a baking pan (13 X 9 inch) and place some foil paper over it. Take a large pan, add the butter and dark chocolate to melt it together. In a different bowl, beat the eggs and sugar properly. Then, slowly add the salt and flour in as well. After you add the flour, make sure to fold the mixture and not stir it. Once everything is incorporated properly, add the white chocolate chips in. Combine everything and take it out on the baking pan. Smear the mixture properly on the sheet and gently press it down to the level you want the thickness at. Place the baking pan in the oven for about 25 minutes. Once the brownies are ready, you will see the top drying and some small cracks over it. Do a quick toothpick test and once it's ready, remove it from the oven. Cut the brownies into square pieces as soon as it comes out of the oven. Place the pieces on a platter and sprinkle powdered sugar on top. Call everyone to do a taste test while the brownies are still warm.
Recipe #2: Dark Chocolate-Peanut Butter Brownies
Ingredients for 32 Brownies
- 1 oz unsalted butter
- 10 oz light brown sugar
- 4 oz golden syrup or corn syrup
- 2 oz unsalted butter
- 1 oz Dutch-processed cocoa powder
- 1 teaspoon salt
- 3 oz dark chocolate chips
- 2 oz chopped dark chocolate
- 3 oz creamy peanut butter
- 3 eggs
- ½ teaspoon vanilla
- 5.25 oz cake flour
Before we start making the brownies, preheat the oven at 350ºF. Take a ¼ sheet pan and smear some butter over it. Place a sheet of foil or parchment paper over it. Take another small bowl and mix 1 oz unsalted butter, peanut butter, and chopped dark chocolate. Prepare a double boiler and melt the mixture for about 30 seconds. Once you get a smooth chocolate paste, keep it aside to cool. Combine the peanut butter mix with sugar, 2 oz unsalted butter, and golden syrup. Mix it well and add the eggs and vanilla to this. Combine everything properly. The cake flour, salt, cocoa powder gets sifted in a different bowl. Now the flour goes into the wet ingredients and everything needs to be folded properly. The mix needs to be moist and not dry. The last thing you do is add the dark chocolate chips and mix again. Take the baking sheet and place the mixture in it. Bake the brownies for at least 35 - 40 minutes. Keep doing the toothpick test and once the brownies are ready, bring the sheet out. Let it sit for 5 - 10 minutes and cut them into pieces. Your peanut butter dark chocolate brownies from scratch are ready to enjoy!
Recipe #3: Dulce de Leche Brownies
Ingredients for 20 Brownies
- 4 oz dark chocolate
- ¾ cup butter
- ⅓ cup dulce de leche
- 1⅓ cups sugar
- ¼ cup dulce de leche (purchased)
- ½ teaspoon salt
- ½ teaspoon cinnamon
- ¼ cup brown sugar
- ½ cup flour
- ½ cup pecan halves, chopped
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- 3 eggs
- ⅓ cup fudge sauce
- 1 cup flour
- 2 teaspoons vanilla
- 3 tablespoons brown sugar
- 2 tablespoons butter, melted
Before we start making the brownies, preheat the oven at 350ºF. Take a baking pan and place some foil paper over it. Prepare a double boiler and melt butter and dark chocolate over it. In the same bowl, add the ¼ cup dulce de leche, eggs, and vanilla, and whisk everything properly. Now sift the flour and salt in the mixture. Pour the dough batter in the baking pan and make the crumble mixture that goes on top of the brownies. Take a small bowl, add ⅓ cup dulce de leche, brown sugar, chopped pecans, ½ cup flour, cinnamon, and salt. If the mixture is too gooey, add more flour to it. Smear a thick or thin layer of this mixture over the brownie. Bake the brownies for about 40 minutes and keep a regular check with a toothpick to see if the brownies are ready. Remove the pan from the oven and drizzle the fudge sauce over the hot brownies. Cut them into pieces and taste one while they are warm.
