Dairy-free Recipe for Kids - Ham and Swiss Sandwiches

Ingredients
  • Thinly sliced ham, 15 ounces
  • Thick whole grain bread, 10 slices
  • Dairy-free mayonnaise, ½ cup
  • Olive oil, ¼ cup
  • Nutritional yeast, ¼ cup
  • Rice milk or soymilk, 1 cup
  • Cornstarch, 1 tablespoon
  • Vegetables and toppings, according to preference (thinly sliced tomatoes, onions, lettuce and pickles, etc.)
  • Soymilk powder, ¼ cup
  • Salt to taste
Cooking Instructions

Lightly brush the bread slices with olive oil on both the sides and place them on a greased baking tray. Bake this dish in a preheated oven at 400 ºF for about 3 minutes. Once the lower side has baked, flip the bread slices and place the thinly sliced ham and bake them for 3 more minutes, till the ham gets cooked. Remove the dish from the oven and keep it covered to keep the slices warm. Now take a small bowl and mix the cornstarch, nutritional yeast and soymilk powder. Keep this Swiss cheese aside till you prepare the filling for the sandwich. Whisk the mayonnaise, olive oil and soymilk till they combine properly. Now add the remaining soymilk powder and salt and continue whisking till all the lumps have dissolved. In a skillet heat the Swiss cheese mixture over medium flame till it thickens a bit. Place the ham sandwiches on a serving plate and pour the warm cheese on top of the ham top it with your desired topping and place the toasted bread slices on top.

Dairy-free Dinner Recipe - Linguine with Clam Sauce

Ingredients
  • Whole wheat linguine noodles, 1 package
  • Fresh littleneck clams, rinsed in cold water and scrubbed, 2 pounds
  • Large onion, chopped, 1
  • Non dairy milk, 3 tablespoons
  • Parsley or dill, finely chopped, ½ cup
  • Dry white wine, 1 cup
  • Olive oil, 5 tablespoons
  • Garlic cloves, minced, 5 to 6
  • Pepper, 1½ teaspoons
  • Salt to taste
Cooking Instructions

Take a large saucepan and boil water with salt it. Cook the linguine noodles in the salted boiling water till they become tender. Drain the water with the help of a colander and keep the cooked noodles aside. In a stock pot, heat the olive oil and cook the onions and garlic, till the onions turn pinkish brown. Pour the white wine into the pot and let it simmer for about 5 to 7 minutes. Transfer the clams to the pot and simmer for five more minutes till all the clams have been cooked. Now add the spaghetti, chopped herbs, non dairy mil, pepper and salt and cook till all the ingredients are mixed thoroughly.

Dairy-free Dessert Recipe - Three Berry Pie

Ingredients
  • Fresh strawberries, halved, 2 cups
  • Raspberries, 2½ cups
  • Fresh blueberries, 2 cups
  • White sugar, ½ cup
  • 9 inch double crust pie with pastry, 1
  • Cornstarch, 2½ tablespoons
Cooking Instructions

For preparing this dessert, take a large mixing bowl and combine the cornstarch and white sugar together. Now transfer the raspberries, blueberries and strawberries to the mixing bowl and toss them till the berries are coated with the sugar cornstarch mixture. Cover half of the pie crust with pastry and spoon the berry mixture on top of the pastry. Now transfer the remaining pastry on top of the berry mixture and seal the second pie crust with the first one at the corners with a foil. Bake this pie in a preheated oven at 190 ºC for about 30 minutes till the top turns golden brown. Remove the pie from the oven and allow it to cool down for about 10 minutes before enjoying it.
