Custard Recipe for Cream Puffs

Try making some of your own cream puffs, and use one of these custard recipes to make soft creamy fillings.
Cream puffs, fresh out of the oven filled with lusciously rich cream filling will not just floor your guest but you as well. They are easy to bake, even for a cooking-baking novice. Try out these custard recipes for filling in those cream puffs, and don't just stop at the fillings, try the cream puff dough recipe to make your own puffs.

Cream Puff Dough

Ingredients:
  • All-purpose flour, ¼ cup
  • Egg, 1
  • Unsalted butter, 1 ounce
  • Water, ¼ cup
In a saucepan over medium heat, melt butter and add water. Stir in flour all at once and beat until the flour has gotten completely mixed. Keep stirring continuously for a few seconds, this will cook the flour. As it is getting cooked, it will come together. Immediately transfer to a food processor, and pulse until the dough has cooled down. Beat in the eggs and pulse once more, until the eggs gets all well blended. Drop a large tablespoon of puff dough onto a baking sheet, spacing them two inches apart. Bake at moderate heat until the puffs puff and become golden brown. Once done, remove from the oven and let it cool completely before using or wrap airtight and freeze.

Cream Cheese Puffs

Ingredients:
  • Softened cream cheese, 3 tbsp
  • Minced ginger, ¼ tsp
  • Chopped parsley, 1 tbsp
  • Minced basil, ½ tbsp
  • Minced basil, 1 tbsp
  • Dijion mustard, 1 tsp
  • Ground meat, ¼ cup
  • Salt and pepper, to taste
In a bowl, mix cheese, butter, parsley, basil, chives, Dijion mustard, meat, salt and pepper together. Spoon a tablespoon in the puffs, filling them to the brim. Serve with some sauce.

Custard Filling for Cream Puffs

Ingredients:
  • Flour, 7 tbsp
  • Vanilla extract, ½ tsp
  • Egg yolks, 3
  • Butter, 1 tbsp
  • Water, 1 cup
  • Milk, ¾ cup
  • Sugar, ¾ cup
  • Puff pastry, 10
Except for the butter, vanilla extract and egg yolks, blend all ingredients together. Pour the contents in a saucepan, and place it over medium heat. Stir mixture continuously, until thick and bubbly. Remove from heat and spoon in the vanilla extract and butter. Let the mix cool off completely. Stir in the egg yolks, return to low flame, stirring continuously until the mixture gets a glossy look. Allow the custard filling to cool off completely before filling in puff pastries.

Chocolate Cream Puffs

Ingredients:
  • Semisweet chocolate, 12 ounces
  • Vanilla ice cream, 3 cups
  • Warm water, ½ cup
  • Puff pastry, 8
In a double boiler, melt chocolate and blend it with some warm water, stirring occasionally. Slice top of the pastry, keeping the edges intact, and add a small scoop of ice cream in each. Place on serving platter, and pour a tablespoon of warm chocolate sauce over it.

Strawberry Filling for Cream Puffs

Ingredients:
  • Fresh strawberries, sliced, 1 cup
  • Granulated sugar, ½ cup
  • Whipped cream, 1½ cup
  • Mint leaves, chopped, 1 tbsp
  • Confectioner's sugar, 2 tbsp
Sprinkle sugar on sliced strawberries and refrigerate for half an hour. Beat cream and remaining sugar until stiff and perky. Slice off the top part of the pastry, stuff it with sliced strawberries and whipped cream, replace top and sprinkle with some confectioner's sugar and mint leaves.

Don't just stick with the recipes mentioned above. Try as many variations as you can with fresh fruits, ground meat and vegetables!
