Cucumber sandwiches are for the snack world, what chicken soup is for the sick soul. It's a snack that is truly like no other. And if you've noticed, it is a classic choice for all purposes. Cucumber sandwiches seem to fit perfectly in all the situations that they are placed in - may it be as an accompaniment to a picnic out in the countryside, or as a late afternoon snack right after your baseball or swimming practice.

These sandwiches are very filling and can be had as a plain snack without any frills, or could be crafted into a delicious meal with those extra frills. So here's what we'll do today. Let's talk about some basic and easy sandwich recipes.

Recipe # 1

Ingredients
  • Mint leaves - ¼ Cup
  • Butter - 2 tbs, unsalted
  • Bread slices - 6 nos.
  • Cucumber - about 3 inches.
  • Cream cheese - 2tbs.
Preparation
  1. Take the mint leaves and wash them under water, then strain the excess water off.
  2. Now dice the leaves.
  3. Mix the mint, butter and cheese into a paste, by placing them all into a bowl.
  4. Spread the paste on a slice.
  5. Now slice the cucumber into the desired thickness.
  6. Place the diced cucumber pieces onto the slice and cut into desired shape and size.
Recipe # 2

Ingredients
  • Cucumber - 1 large, sliced and peeled thinly.
  • Butter - ¾ Cup
  • Bread slices - 20 nos.
  • Fresh Garlic - 2 tbs.
  • Lemon juice - 1 tbs
  • Olive oil - 1 tbs
  • Pepper to taste
  • Salt
Preparation
  1. Salt the cucumber slices and keep them in a strainer for the excess water to drain off.
  2. Mix the butter and garlic and apply to one side of the slice.
  3. Put the olive oil, pepper and lemon juice in a bowl and stir well.
  4. Now add the salted cucumber slices to the mixture and coat well.
  5. Now place the cucumber on top of the bread slices and cover with the other 10 slices.
  6. Remove the crusts and quarter it if you wish.
  7. Serve immediately.
  8. This makes about 35-40 sandwiches.
Recipe # 3

Ingredients
  • Cucumber - 1 large, sliced and peeled thinly.
  • 1 pack of cocktail rye bread.
  • Italian salad dressing mix - 7 ounce
  • Whipped cream cheese - 8 ounce
Preparation
  1. Mix the cream cheese and salad dressing in a small bowl.
  2. Spread this on the rye bread slices on either side.
  3. Now place the cucumber pieces on top of this mixture.
Recipe # 4

Ingredients
  • Cucumber - 1 small, sliced and peeled thinly.
  • Eggs - 3, hard cooked and chopped.
  • Bread slices - 8 slice (whole wheat).
  • Green pepper - ¼ Cup, chopped.
  • Mayonnaise - ¼ Cup
  • Red onion - 2 tbs, chopped.
  • Lettuce Leaves - 4 nos.
  • Lemon juice - ½ tsp.
  • Pepper - 1/8 tsp.
  • Salt - 1/8 tsp.
Preparation
  1. Mix the green pepper, eggs, onion, lemon juice, mayonnaise, salt and pepper in a bowl.
  2. Spread on the bread slices (4).
  3. Place the cucumber and lettuce on the slices.
Recipe # 5

Ingredients
  • Cucumber - 1 ½ Cup, finely chopped.
  • Cream cheese - 3 oz.
  • Bread slices - 32 slices
  • Celery - ½ Cup
  • Mayonnaise - ¼ Cup
  • Onion - 1 tbs, grated.
  • Parsley - 1 tsp, chopped.
  • Pepper - 1/8 tsp.
  • Salt - ¼ tsp.
Preparation
  1. Peel the cucumber , after removing seeds.
  2. Now chop into pulp and drain well.
  3. Mix the mayo, cheese, celery, onion, parsley, pepper and salt in a bowl.
  4. Lightly butter the bread slices.
  5. place 2 tbs cucumber pulp onto the slices (16) and cover with the remaining.
  6. Cut into desired rectangular or triangular shape and cut the crust off, if you so wish.
  7. This makes 64 sandwiches (in triangles)
