When my friend suggested I try and take a quick bite of quiche, I thought it did not really sound very appetizing. But to my pleasant surprise, I got hooked on to quiche, the minute I sunk my teeth into it. Quiche is basically a dish that belongs to the French cuisine. There are many components that are added into the main ingredients of milk and eggs in the pastry crust, which makes every quiche, unique in its own way. Crustless Quiche Recipe #1

Ingredients
Butter (¼ cup-½ stick)
All-purpose flour (¼ cup)
Milk (¾ cup)
Salt (½ teaspoon)
Dijon mustard (½ teaspoon)
Eggs (5)
Cottage cheese (1 cup)
Baking powder (½ teaspoon)
Grated Parmesan cheese (3 tablespoons)
Chopped green onions (¼ cup)
Cream cheese - softened (4 ounces)
Shredded Swiss cheese (6 ounces)
Cooked bacon (3 slices) - crumbled
Cherry tomatoes (6) - cut in half

Preparation
First, you need to melt the butter in a saucepan, which is placed on high heat. Then add some flour and keep stirring the mixture till it turns bubbly. Now, you need to add the milk gradually. Once it thickens, remove it from the heat and let it cool for around 20 minutes. Meanwhile, preheat the oven to 350° F. You also need to combine baking powder with some cottage cheese and mustard. Sprinkle with some salt and place it aside.

Next, you need to beat the eggs in a large mixing bowl. Add the cream cheese along with the cottage cheese mixture into the milk preparation. Add the Swiss and Parmesan cheese as well. Then, pour this into a buttered pie plate, which is around 10 inches in diameter. Use the chopped green onions as a sprinkling on top, along with some bits of crumbled bacon. Place the tomato halves above this. Now, bake this at 350° F for around 40 minutes. Once it turns a light shade of brown, place it aside for 15 minutes and then serve.

Crustless Quiche Recipe #2

Ingredients
Frozen chopped onions (1 cup)
Shredded Swiss cheese (2 cups)
Large eggs (4)
Whole milk (1 cup)
Heavy cream (1 cup)
Diced cooked ham (¼ pound-1 cup)
Unsalted butter (1 tablespoon)
Fine dry plain bread crumbs (1½ tablespoons)

Preparation
You need to preheat the oven to 425° F. Then, butter the quiche dish (you can use a 10 inch pie plate) and sprinkle with some bread crumbs. Meanwhile, cook onions and ham in butter in a large, heavy skillet. Cook on medium high heat, with occasional stirring for 5 minutes. Place this evenly in dish and sprinkle some cheese on top. Meanwhile, whisk cream, milk and eggs together. Add a teaspoon of pepper. Pour this over the cheese. Bake the preparation for 20 minutes. Let it cool down slightly, after baking. Then cut it into medium-sized pieces to serve.
