Creamy Asparagus Soup Recipes
Asparagus contains no fat at all. That simply means that it contains no cholesterol. It's low in calories and sodium while being rich in dietary fiber, folic acid and potassium, which makes it more healthy. Asparagus is very popular as a healthy vegetable, worldwide. It is used in a variety of dishes. Here are some easy-to-make delicious soups, made with asparagus and fresh cream.

Creamy Summer Asparagus Soup

Ingredients
  • 2 cups of fresh asparagus (chopped into thin slices)
  • 1 Onion (finely chopped)
  • 2 tablespoons flour
  • 2 tablespoons butter
  • ¼ cup rich chicken broth
  • ½ cup milk
  • ½ cup fresh cream
  • 4 cups water (boiling)
  • salt to taste
  • 2 egg yolks
  • White pepper
Directions

Melt the butter in a big cooking pan. Sauté the chopped onion in it, until transparent. Now add the asparagus slices into it and continue frying over medium heat until the moisture steams out and the mixture begins to brown. Add the flour and stir well so as to coat each piece with some flour. Cook for 4-6 minutes over medium-high heat. Pour in some boiling water and simmer for about 40-60 minutes. Strain out all the cooked asparagus pieces. This will leave behind a thin yellowish green soup. To thicken the soup add 2 egg yolks and salt to it. Add milk and reheat the soup. Decorate with fresh cream and some freshly-ground white pepper. Serve immediately.

Cream of Asparagus Soup with Herbs

Ingredients
  • 2 ½ cups of asparagus spears (chopped in 1-inch pieces)
  • 1 onion (chopped finely)
  • ½ turnip
  • 1 spring parsley
  • 1 sprig of mint
  • 2 stalks of white celery
  • 1sprig of thyme
  • 6-8 peppercorns
  • 6 cups white vegetable stock
  • 2 tablespoons of butter
  • ½ cup milk
  • 2 tablespoons of flour
  • 2 tablespoon cream
  • Salt to taste

    Put the chopped asparagus, turnip, celery and onion into a pan add vegetable stock to it. Tie salt, peppercorns and herbs (i. e. parsley, mint, thyme) in the piece of muslin. Place it in the boiling mixture. Boil the mixture and then simmer for about an hour. Then remove the muslin from the mixture and make a smooth puree of it using a blender. Now, melt butter in a fresh pan and add the flour to it. Blend it well and cook for 1-2 minutes without changing the color of the flour. Add the asparagus puree to it while stirring continuously. Bring the mixture to boil and cook it for 3-4 minutes. Add milk and fresh cream and reheat without boiling the soup. Cook the asparagus tips in salted boiling water until they get tender and decorate the soup.

    Cream of Asparagus Soup

    Ingredients:
    • 1 bundle of fresh asparagus (tips chopped to ½ inch pieces and remaining roughly chopped)
    • 2 onions (diced)
    • 8 cups chicken stock/chicken broth
    • 1 large potato (peeled and diced)
    • ¼ cup of flour
    • ½ cup of thick fresh cream
    • 1 tablespoon butter
    • Pepper and salt to taste
    Directions

    Blanche the asparagus in boiling water for half a minute and remove. In a large pan, sweat the diced onion with butter, salt and paper. Sauté for about 5 minutes until the onion softens. Then add ½ a cup of water and the flour to the cooked onion. Add the chicken stock, roughly cut asparagus pieces and the potato to it. Heat it over medium-high flame for 45 minutes. Cool it down to normal temperature. Add the fresh cream to the mixture and blend it into a smooth puree. Heat this puree for 7-10 minutes, again. Garnish with the chopped asparagus tips.

    Creamy Asparagus Soup (Cold)

    Ingredients
    • 4 bowls of Cream of Asparagus Soup
    • ¾ cup milk
    • ½ cup sour cream
    • 2 tablespoons of Worcestershire sauce
    • Chives to garnish
    Directions

    Mix all the ingredients except chives in a blender. Blend until a rich frothy mixture is formed. Garnish the soup with the chives and serve!
