Crab Cream Cheese Stuffed Mushroom Caps
Ingredients
- ½ cup cream cheese
- ¼ cup black pepper
- ½ cup fresh parsley leaves, chopped
- ½ cup green onions, chopped
- 4 tbsp Parmesan
- 2 portobello mushroom caps, or 10 white mushrooms caps
- ¼ cup garlic powder
- ½ cup bread crumbs
- 1 cup crab meat
- Nonstick cooking spray
- 1 cup salt
Mix garlic powder, salt and black pepper together and keep aside. It is to be used as seasoning, it can be preserved until 6 months. Preheat the oven to 375 degrees F. Add cream cheese, green onions, crab meat, Parmesan cheese and parsley to a bowl and mix well, season to taste. Now start stuffing the mushroom caps with the mixture, when you stuff all the mushroom caps, top them with bread crumbs. Now spray the mushroom tops with nonstick spray so that they brown. Cook in the preheated oven for about 20 minutes. When the mushroom caps are baked, you can season them.
Crabmeat Stuffed Mushrooms with Cream Cheese
Ingredients
- 4 oz. cream cheese
- 1 tsp white pepper
- 1 cup bread crumbs
- 2 cup crackers, crushed
- 1 tsp white wine
- 1 tsp horseradish
- 1 tsp Worcestershire sauce
- 4 oz. snow crab meat
- Cheddar cheese
- 4 oz. sour cream
- 1 oz. mayonnaise
Add cream cheese, mayonnaise and sour cream in a mixer bowl and blend at a low speed. Once blended, add 4 ounces snow crab followed by bread crumbs and crackers, blend once and then add white pepper, horseradish and Worcestershire sauce. Mix together. Now remove the stems of the mushrooms and wash them. Put as much stuffing as possible in the mushroom cap, and place the filled mushrooms in casserole dish. Drizzle it with butter and white wine and bake for about 5 minutes at 350 degrees. When baked, place thin slices of cheddar cheese over the mushroom caps. Heat again until the cheese melts.
Crab Stuffed Mushrooms with Sauce
Ingredients
- 3 cans (6 ounces each) crab meat, drained, flaked and cartilage removed
- 2 slices bread, crust removed and cubed
- ½ cup milk
- 1 tbsp lemon juice
- 1½ tsp Worcestershire sauce
- 1 tsp dried minced onion
- ½ cup mayonnaise
- ½ tsp salt
- 1/8 tsp pepper
- 1 tbsp all-purpose flour
- 3 tbsp butter, divided
- 48 whole medium mushrooms
- Paprika
Take a large saucepan and melt 1 tbsp butter in it. Now stir in flour, until smooth followed by milk. Bring to a boil and cook for about 2 minutes, over medium heat. When cooked, reduce the heat and stir in bread cubes, onion and Worcestershire sauce. Mix well and remove from the heat, let cool at room temperature. When well cooled, add in lemon juice, pepper, salt and mayonnaise; set aside. Now remove and chop the mushroom stems and keep aside the caps. In a pan, saute chopped mushroom stems, crab and the left over butter. Slowly, using a spoon, transfer to the sauce. Now stuff 1 tbsp mixture inside mushroom cap and place on greased baking sheet. Season with paprika and bake at 400 degrees F for about 25-30 minutes.
