Cold Potato Salad Recipe #1:
Ingredients
Cider vinegar (3 tablespoons)
Mayonnaise (3/4 cup)
Chopped parsley (1/4 cup)
Mustard powder (1 teaspoon)
Thinly sliced garlic (1/2 tablespoon)
Chopped fresh tarragon (1 tablespoon)
Fine chopped cornichons (3 tablespoons)
Small dice red onion (1/2 cup)
Kosher salt (1 teaspoon)
Thinly sliced celery (1/2 cup)
Freshly ground black pepper (1/2 teaspoon)
Red potatoes - large diced (2 1/2 pounds)

Preparation
First, you need to place the potatoes in large heavy pot. Then pour some cold water over it and place the pot on medium heat. Then, cover the pot and bring the ingredients to a boil. Once done, reduce the heat immediately and remove the lid as well. Then, let it simmer gently till the potatoes turn tender. Once done, drain and place it in an ice bath so that it cools down. Then, use a tea towel to remove the skin by rubbing it with the same. Now, you need to slice the potatoes into rounds. Place these sliced potatoes into a zip top bag. You now have to add the vinegar and toss it properly so that it coats the ingredients completely. Once done, place the bag in the refrigerator overnight.

Take a large mixing bowl and make a combination of all the ingredients - mustard, mayonnaise, garlic, parsley, cornichons, tarragon, celery and onions. Once these ingredients blend well, now you can add the potatoes. Use some salt and pepper for seasoning. Chill the salad in the refrigerator for an hour before serving.

Cold Potato Salad Recipe #2:
Ingredients
Salt (1/2 tsp)
Sugar (1 tsp)
Salad oil (1 tbsp)
Vinegar (3 tbsp)
Large potatoes (6)
Dill seeds (2 teaspoons)
Celery – diced (3-4 stalks)
Mustard – prepared (1 tsp)
Medium onion – minced (1)

Preparation
Take a medium saucepan and cook potatoes in this in boiling hot salted water. Once the potatoes turn tender, drain the water but reserve around ¾ cup of the potato water. Then, you can dice the potatoes. Now, you need to add the oil, chopped celery and minced onion. Toss these ingredients gently to combine them well. In the meantime, take a small saucepan and pour the ¾ cup of the potato water in this. Bring it to a boil. Pour this further over potatoes and onions. Place it aside to cool down to room temperature. While serving, add the vinegar, sugar, mustard and dillseed. Let it cool down completely before serving.
