Coconut is easily available in the tropical areas and so is the coconut oil. Coconut oil is extracted from dried coconut and has many health benefits. Coconut oil does not contain any saturated fats which makes it beneficial for patients suffering from heart ailments, diabetes and high-blood pressure. Lauric acid, caprylic acid and capric acid are important contents of coconut oil. These acids make coconut oil helpful in dealing with many viruses and bacteria. Coconut oil is usually recommended for making food items because it has lesser calories and the oil is easily converted into energy in the human body. Coconut Granola

Ingredients
  • 8 cups of quick cooking oats
  • 1 cup oat bran
  • 3/4 cup chopped almonds
  • 1 cup unsweetened flaked coconut
  • ½ cup coconut milk
  • ¼ cup vegetable oil
  • ¼ cup virgin coconut oil
  • ½ cup barley malt syrup
  • 1 tsp vanilla extract
  • ½ cup honey
  • ½ cup dried cranberries
Procedure

Mix oats, oat bran, almonds and coconut. Bake this mixture in a preheated oven at 350 degree Fahrenheit. The oats are kept in the oven for 7-8 mins, till they become crispy. In the meantime, combine coconut milk, coconut oil, malt syrup and honey in a cooking pan. Boil this mixture for 1-2 mins and wait till the mixture comes to room temperature. Add vanilla extracts to this syrup.

The granola in the oven is cooled and the syrup is added, until it is fully coated. Spread this coated granola on the baking sheets and toast it in a preheated oven for about 8 mins. Cool the fragrant, crispy granola and add cranberries. Use an airtight container to store the cooled cereal. Dried pineapple or dried papaya and dates, instead of cranberries, can be added for different flavors.

Cream of Cauliflower Soup

Ingredients
  • 2 cups chopped cauliflower
  • ½ cup chopped celery
  • ¼ cup chopped onion
  • 2 cups of coconut milk
  • 2 tbsp organic virgin coconut oil
  • ¼ tsp curry powder
  • 2 tbsp flour
  • 1¼ teaspoon salt
  • ⅛ teaspoon white pepper
  • 1 cup water
Procedure

Cook celery, cauliflower and onion in water for about 20 mins on a low flame to make them tender. Blend the mixture in a blender at low speed. Heat some coconut oil in a saucepan and add flour to it. Stir the flour frequently, until it turns brownish in color. Add coconut milk and stir the flour, till the mixture becomes even.

Combine the puree from the blender with the flour mixture in the cooking pan. Add curry powder, salt and pepper. Stir it till it becomes hot; but do not boil it. A healthy soup is ready!

Chicken in Coconut Milk

Ingredients
  • 3 pounds broiler-fryer chicken
  • ¼ cup coconut oil
  • 1 sprig fresh parsley leaves
  • 2 cups coconut milk
  • 1 garlic clove (minced)
  • 1 teaspoon dried thyme
  • 1 onion finely chopped
  • 1 small hot chili pepper
  • ¼ pound sliced mushrooms
  • Salt and pepper to taste
Procedure

Cut the chicken in small portions. Heat oil in a frying pan and fry chicken pieces until they turn brown and crunchy. Keep this crispy fried chicken aside. Saute onion, garlic and mushrooms for 3 mins in the same frying pan. Add the fried chicken to the frying pan and add coconut milk and pepper to it.

Take a cheese pouch and tie hot pepper, thyme and parsley in it to make a bouquet garni. A bouquet garni is nothing but a cheese pouch in which certain herbs are tied. Add this bouquet garni to the chicken curry in the frying pan. Cover the chicken and simmer till it becomes tender. Remove the bouquet garni, after simmering the chicken for 1¼ hour and serve it with boiled rice.

Pineapple Smoothie

Ingredients
  • 1 cup coconut milk
  • 1 cup fresh pineapple
  • 2 tbsp organic virgin coconut oil
  • 1 cup orange juice
  • 1 banana
Procedure

Mix the coconut oil and coconut milk in a mixer. Then blend this mixture with the other ingredients and serve.
