Cinco De Mayo Food Recipes

Yummy Salsa Recipe:
Ingredients
Medium red onion – chopped (1)
Green onions - sliced thin (3)
Chili powder (1/2 teaspoon)
Garlic powder (1/4 teaspoon)
Oregano – crushed (1/2 teaspoon)
Tomato sauce (one 8-ounce can)
Red wine vinegar (2 tablespoons)
Fresh cilantro - finely chopped (1/8 cup)
Cumin powder (1/4 teaspoon)
Salt and pepper
Chopped mild green chilies (One 4-ounce can)
Serrano chile /Jalapeno) - seeds removed and chopped fine (1-use gloves for the same)
Medium fresh tomatoes - chopped to 1/4-inch pieces (6)
Preparation
Combine the following ingredients together – red onions, green onions, Serrano chile, cumin, oregano, chili powder, garlic powder, green chilies, cilantro, tomato sauce and red wine vinegar. Add some amount of salt and pepper as per your taste. Place these ingredients aside in a bowl overnight. This will let the flavors blend well. While serving, use some tortilla chips as a dip. This salsa can be stored in the refrigerator for further use during the next few weeks!
Delicious Stuffed Mexican Tomatoes:
Ingredients
Yellow vine-ripe tomatoes (5)
Salt and pepper
Lemon juice (1/2 lemon)
Dried breadcrumbs (2 tablespoons)
Extra-virgin olive oil (2 tablespoons)
Pimentos - drained and chopped (2)
Red onion - chopped (1/4)
Dried oregano - crushed (1/2 teaspoon)
Fresh cilantro - chopped (2 tablespoons)
Small zucchini - 1/4-inch diced (1/2)
Jalapeno pepper - seeded and finely chopped (1)
Preparation
With a knife, cut off the top portions of the 4 tomatoes and trim the bottom of the tomato so that they can be kept upright. Use a spoon to hollow out the inside of the tomato. Then, use some salt and pepper as seasoning. Next, you need to remove the stem of the remaining tomato. Once done, seed and chop the tomato.
Meanwhile, take a bowl and combine the following ingredients – jalapeno, chopped tomato, onions, pimentos, lemon juice, oregano, cilantro and zucchini. Then, sprinkle some breadcrumbs over these ingredients in the bowl. You can now add some virgin olive oil. Remember to pour the oil slowly. Add some salt and pepper to bring the flavor. Use these ingredients as a filling for the empty tomatoes.
Yummy Cream and Cheese Flan:
Ingredients
Sugar (2 cups)
Eggs (5)
Vanilla (1 teaspoon)
Evaporated milk (1 can)
Cream Cheese - cut and softened (1 pack)
Salt
Preparation
Preheat the oven to 350° F. Then, place around 1 cup of sugar in a small sized saucepan. Cook it on medium heat till the sugar turns a shade of golden brown. Use a wooden spoon to stir the same. You would need to tilt the pan so that the bottom of the pan gets covered evenly with sugar. Place this aside.
Then, combine milk and cheese in a blender and blend it till it turns smooth. Now, add the remaining amount of sugar (1 cup) with vanilla and eggs. Add some salt to taste. Next, blend these ingredients until they turn smooth. Pour the same into the pan, which contains the sugar syrup. Now, place this pan into a larger sized baking pan. Add some hot water to the larger pan. Bake this for around 50 minutes. Once done, let it cool down. Then, remove the flan from the water and let it cool further on the rack. Refrigerate it to chill it completely. Serve chilled!
