So often I had heard about people raving about cheesecakes and it was not until I tasted this delicious and exotic dessert, that I got hooked on to it. Cheesecakes are elegant desserts that sometimes resemble a pie instead of a cake. The basic cheesecake is typically sweet and full of cheese with a creamy filling. This filling is generally made of eggs, egg whites, cream, sugar, and cream cheese or cottage cheese. One has seen variations of the basic cheesecake over the years. The options have taken a creative turn with vanilla or dark chocolate flavorings. The toppings also vary in cheesecakes such as strawberries, raspberries, caramel, chocolate, etc. Well, if you prefer to cook rather than pick these up from the regular pastry shop, read on to know some scrumptious recipes.

Creamy Cheesecake

Ingredients
For the crust:
  • Graham wafer crumbs (1¼ cups)
  • Butter, melted (⅓ cup)
  • Sugar (¼ cup)
For the filling:
  • Cream cheese, softened (2 package-8 oz. each)
  • Eggs (3)
  • Sweetened condensed milk (1 can-300ml)
  • Lemon juice (¼ cup)
Preparation
For the crust:
You need to combine the butter; sugar and the graham wafer crumbs and press this into the bottom of a spring-foam pan.

For the filling:
Take a large mixer bowl and beat the cream cheese in this until it becomes fluffy. Once done, add the sweetened condensed milk. Beat the mixture till it smoothens. Now, add the eggs and the lemon juice. Mix this together. Pour this combination over the crust.

Time to bake this combination! Bake it for at least 55 minutes at 300º F. Once done, let it cool down to the room temperature. You need to chill it before serving. Garnishing can be done as per your desire.

Chocolate Chip Cheesecake

Ingredients
For the crust:
  • Butter, melted (¼ cup)
  • Oreo cookie crumbs (1½ cups -18 cookies approximately)
For the filling:
  • Cream cheese, softened (3 packages-8 oz. each)
  • Sweetened condensed milk (1 can)
  • Eggs (3)
  • Vanilla (2 teaspoons)
  • Mini chocolate chips (1 cup)
  • Flour (1 teaspoon)
Preparation
For the crust:
You need to combine the butter and the Oreo cookie crumbs. Then, press this into the bottom of a spring-form pan, which is around 9".

For the Filling:
Take a large bowl and beat the cream cheese in this till it fluffs up. Once done, add the sweetened condensed milk. Beat this combination until it smooths. Now, add the eggs and vanilla and mix this together.

Next, you need to combine the chocolate chips (½ cup) with the flour (1 teaspoon) in a small bowl. Toss this mixture till the chocolate chips get coated. Now, you can add the cheese mixture. Stir slowly and pour it over the crust. Once done, you need to sprinkle the chocolate chips on top of this mixture.

Now comes the baking process. Bake this for an hour at 300º F. Once done, let it cool to room temperature. Your chocolate cheesecake is ready to be served!

Brownie Cheesecake

Ingredients
  • Cream Cheese, softened (16 oz)
  • Sugar (½ cup)
  • Large Eggs (2)
  • Brownie Mix (8 oz-1 Pk)
  • Vanilla (1 tsp.)
  • Milk Chocolate Chips, melted (1 cup)
Preparation
Before you begin the preparation, you need to grease the bottom of a 9-inch spring-form pan. The brownie mix needs to be prepared as per the directions on the package. Now, pour the batter into the pan and bake this for 15 minutes at 350º F.

Make a combination of the cream cheese, sugar and the vanilla and mix it with an electric mixer on medium speed. Ensure this mixture blends well. Once done, add the eggs and mix it well with each addition. Now, you need to pour the cheese mixture over the brownie layer.

The melted chocolate needs to be spooned over the cream cheese mixture. Use a knife to cut through this. Bake this mixture for at least 35 minutes at 350º F. Chill before serving.
