Easy Cheap Meals
Steak and Corn Salad
This is low cal, easy and makes for a sumptuous meal. Here is how you do it.
Ingredients
- 1 lb. boneless sirloin steak or round steak
- 3 tbsp. vinaigrette Italian salad dressing
- 3 ears fresh corn OR 2 cups frozen corn, thawed and drained
- 1/2 cup sliced green onions
- 1 green or red bell pepper, chopped
- 1 cup cherry tomatoes, cut in half
- 1 cup sliced mushrooms
- 1 cup cubed Havarti or Swiss cheese
- 1/2 cup creamy Italian salad dressing
- 4 cups mixed salad greens
- Using a vinaigrette salad dressing, brush the steak and let it stay for around 15 minutes.
- If it is a round steak marinate in the fridge for a minimum 4 hours, 8 hours would be great.
- Blanch the corn in boiling water for 2 minutes after cutting the kennels off the cob.
- Drain the corn.
- Mix corn, onion, pepper, mushrooms, tomatoes and cheese with creamy Italian salad dressing in a large bowl. Place it on the greens while serving in the serving plate.
- Then grill the steak, ideally in 2 sided dual contact grill for around 5 to 9 minutes, depending on how well cooked you want it to be.
- If you are cooking on outdoor grill, cook between 8 to 14 minutes over medium coals.
- Let it stand for five minutes after it is remove from the grill.
- Slice the steak across, forming thin slices and then place the slices over the salad.
- Serve immediately and finish it off as soon as possible!
Mini Focacia
This is a fantastic bread recipe and can be eaten solo or with chicken or steak! Ready?
Ingredients
- 11 oz. can refrigerated soft bread stick dough
- 2 tbsp. olive oil
- 1/4 cup grated Parmesan cheese
- 2 tsp. dried Italian seasoning
- Preheat the oven to 375 degrees.
- Grease the cookie sheets lightly or line using parchment paper.
- Separate the dough into 8 coils after removing it from the can. Remember not to unroll.
- Place the dough on the prepared pan and press each coil of dough in a 5 inch circle.
- Using olive oil, drizzle the dough.
- Get cheese and seasoning together and mix well.
- Sprinkle that over each coil.
- Bake this between 14 to 18 minutes at 375 degrees. This will make the bread golden brown.
- Immediately remove the bread from cookie sheets.
Vegetarian Crockpot Chili
Okay, this is hot, but light for your pocket, however, see if it light for your tummy!
Ingredients
- 12 oz. pkg. frozen protein crumbles
- 2 onions, chopped
- 2 (14 oz.) cans diced tomatoes, un drained
- 15 oz. can tomato sauce
- 1-2 Tbsp. chili powder
- 1 tsp. ground cumin
- 2 (15 oz.) cans red kidney beans, rinsed and drained
- 2 Tbsp. cornstarch
- 1/4 cup water
- Combine all the supplies or the ingredients, rather in 3 to 4 quart slow cooker. Do not put cornstarch and water in the cooker.
- Cover and cook on low heat for around 8 hours, till the vegetables are tender.
- Turn the heat to high.
- Meanwhile mix water and cornstarch till it is smooth.
- Add this to chili and stir it well.
- Get the lid off the veggies in the cooker and cook for around 15 minutes, till it gets slightly thick.
- This is enough for 6 servings, serve hot!
Tomato Meatball Wraps
This is straight from the land of the Godfather, Italy. It is one of the best quick cheap meals you can ever have! Let's get started!
Ingredients
- 500 g minced beef
- 1 tsp mixed herbs
- 1 tbsp oil
- 400 g can chopped tomatoes
- 2 tbsp tomato puree
- 320 g pack 8 wholemeal tortilla wraps
- 100 g Cheddar cheese
- Get the herbs and the seasoning and blend it well with the beef.
- divide it into 24 portions and then roll them into balls.
- In a large frying pan heat oil and then fry the meatballs for around 10 minutes, till they are golden.
- Add the puree and chopped tomatoes and cook for 10 minutes more.
- According to the instructions on the tortilla pack, warm them.
- Then spoon the meat balls over the tortillas, sprinkle over some cheese.
- Ultimately add a blob of soured cream, fold and then serve!
