Cauliflower Soup Recipes

Onion-Garlic Cauliflower Soup
Ingredients
- 2 medium-sized onions
- 1 medium cauliflower
- 1 level tablespoon flour
- Little mace
- 3 teaspoons butter
- Salt and pepper- as per taste
- ¼ pint milk
- 1 clove garlic
- 1½ pints vegetable stock
- fresh parsley
Cut the onions and the garlic into small pieces. Take water in a vessel and boil the cauliflower for a few minutes. Take it off from the heat and let it cool. Drain the water and chop the cauliflower into small chunks. In a mixer, blend milk and keep aside.
Heat butter in a deep-bottomed pan and fry the onion and garlic in it. Add the flour and mix well. Add salt and pepper, and keep on stirring on a low flame for at least a minute. Pour in the stock and mix all the ingredients well. Put in the cauliflower and cook for 20 minutes. Bring to a boil and add the milk that was kept aside. Let it remain on a low heat for some time but do not let it simmer again. Transfer into soup bowls and serve immediately.
Creamy Cauliflower Soup
Ingredients
- 8 ounces sour cream or plain yogurt
- 2 medium-sized cauliflowers
- 3 cups milk
- 2 small onions
- 3 tablespoons butter
- 3 vegetable bouillon cubes, crushed
- Parmesan cheese
- 3 tablespoons flour
- Parsley
Wash the cauliflower thoroughly and boil it for a few minutes. Drain the water and chop the cauliflower into tiny pieces. Cut the onions and the parsley and set aside. In a pan, fry the onions in butter, until it becomes tender. Sprinkle flour on it and continue to fry for some time. Pour sour cream or yogurt and milk and whip until the broth becomes thick. Add the cauliflower and milk into the pan and mix well. Top it with Parmesan cheese and parsley, and serve.
Chicken Broth Cauliflower Soup
Ingredients
- 10 ounces cauliflower
- 16 ounces chicken broth
- 2 medium eggs
- 3 tablespoons butter
- 8 ounces whipping cream
- 2 medium-sized onions
- ¼ teaspoon white pepper
- 1 can condensed cream of potato soup
Break eggs into a medium-sized mixing bowl and add whipping cream, pepper and potato soup. Mix well and keep it aside. Chop onions and cauliflower (after boiling). In a deep-bottomed pan heat butter and lightly fry the onions till they becomes transparent. Pour in the chicken broth and the chopped cauliflower. Let it cook for some time. Transfer it into a blender and make a puree of it. Shift it back to the pan and pour in the egg mixture while stirring continuously. Let it cook for a few minutes and serve hot.
