Salads, as we all know, are rich in nutrients, have no cholesterol and naturally low in calories and sodium. The salted or pickled caper buds are normally used for seasoning or garnishing purposes. The capers salad recipes are filling, easy to digest and increase the fiber intake in the body. They help in maintaining low cholesterol and weight loss. Squid, Lemon and Caper Salad

Ingredients
  • 600 g squid, cleaned, gutted and cut into rings
  • 3 garlic cloves, finely sliced
  • Few whole black peppercorns
  • 2 tbsp capers
  • Juice of 3 unwaxed lemons, with their leaves
  • Handful pitted Kalamata, halved, or whole small black olives
  • 100 ml extra-virgin olive oil
Preparation

In a pan of water put a handful of salt and bring it to boil. Blanch the squid in the pan for 25 seconds and then drain. Alternatively, scorch it on a ridged griddle or cast-iron frying pan for about 30 seconds on either side. With the help of a potato peeler or fruit knife, peel 4 or 5 strips of lemon zest and put in a mixing bowl. If the lemons have leaves, de-stalk and shred two of them and add to the mixing bowl. Soak and rinse the capers if they are packed in the salt and then add to the bowl. Put the lemon juice, olives, peppercorns, garlic, oil in the bowl and mix thoroughly. Now stir in the squid, cover and marinate the bowl in the fridge overnight. Serve with lemon wedges and thin slices of fennel or chicory.

Sicilian Style Tuna Salad with Capers and Olives

Ingredients
  • 20 Sicilian green olives, pitted and chopped
  • 1 lb top-quality canned tuna, or homemade tuna confit
  • 2 tsp capers (rinse if they were preserved in salt)
  • 1 tsp finely chopped fresh oregano
  • 2 chopped green onions or scallions
  • 1 tsp finely chopped fresh parsley
  • 4 tsp finely chopped fennel stalks
  • ½ cup pistachio nuts
  • ¼ cup top-quality olive oil, or oil left over from making the confit
  • Juice of one lemon
  • Salt and freshly ground black pepper
Preparation

Flake the tuna into large chunks and add salt if needed. Take a large bowl and mix all the ingredients except salt and lemon. Store the salad in the fridge for a day or so, and before serving squeeze lemon juice over it. Give it 15 to 20 minutes to allow it to warm up to around room temperature. While serving add capers to it.

Salmon And Caper Salad Recipe

Ingredients
  • 9 oz salmon, (or 2 large fillets)
  • 2 green onions, diced
  • 1 tbsp capers
  • 2 stalks celery, large diced
  • 1 tbsp raspberry vinegar
  • 1 tbsp fresh dill, minced
  • 1 tbsp olive oil
  • ¼ tsp ground pepper
  • 1 pinch salt
Preparation

Cook the salmon on the grill or under the broiler for about 5 to 6 minutes. Cover it with a plastic wrap and allow it to chill in the fridge. After it cools, remove the skin and bones and break into large flakes. Take a bowl and mix together - flakes, salmon, celery, capers, onions and dill. Add vinegar, oil, salt and pepper to it and toss well. Serve it cool or at room temperature.
