Caper Sauce Recipes

Caper sauce is used for garnishing and seasoning grilled or broiled meat. It imparts an excellent taste and flavor to the food it's added to.
The caper sauce is made from caper, a flower bud found on a perennial spiny bush that bears rounded, fleshy leaves and big white to pinkish-white flowers. The unripened flower buds of the plant are prepared for consumption by first drying them in the sun and pickling in vinegar, wine or brine. Capers grow wildly in the Mediterranean region and is a common ingredient in its cuisine. The edible fruit is used to make caper sauce, which is used in seasoning chicken, pork, beef and salads.

Caper Sauce Recipe
Ingredients
  • Capers, 2 tsp
  • Finely minced garlic, 1 small clove
  • Lemon zest, 1 tsp
  • Butter, 4 tbsp
  • Lemon juice, 1 tsp
  • Parsley, ½ tsp
In a small pan, heat butter; add garlic, lemon zest, lemon juice and capers. Stirring continuously, simmer over low heat for 30 seconds and add the parsley. Remove from heat.

Mustard Flavored Caper Sauce
Ingredients
  • Capers, ¼ cup
  • Mayonnaise, 1 cup
  • Dairy sour cream, ¼ cup
  • Dijon mustard, 1 tbsp
  • Horseradish, 1 tbsp
  • White vinegar, 1 tbsp
  • Sugar, ½ tsp
In a large bowl, mix capers, mayonnaise, sour cream, mustard, horseradish, vinegar and sugar. Serve the sauce consistency with your choice of meat.

Caper Butter Sauce
Ingredients
  • Small capers, 3 ounce
  • Chicken broth, 1 cup
  • Medium chopped onion, 1
  • Dijon mustard, 1 tbsp
  • A-1 Sauce, 1 tbsp
  • Butter, 0.25 ounce
Heat butter in a pan, add all ingredients and simmer until thick. Reduce to desired consistency.

Caper Sauce for Fish
Ingredients
  • Caper, 1 tbsp
  • Butter, 4 tbsp
  • Lemon juice, 1½ tsp
  • Chopped parsley, 1 tsp
  • Pepper to taste
Melt butter in a pan and add capers, lemon juice, parsley and pepper. Heat until sizzling hot and pour over steamed or baked fish.

White Wine and Caper Sauce
Ingredients
  • Capers, 1 ounce
  • Cold butter, 1 ounce
  • Double cream, 300 ml
  • Dry white wine, 300 ml
  • Chopped onion, 1
  • Salt and pepper, to taste
Pour white wine into a saucepan with onion and bring it to boil. Simmer until reduced by half. Add cream, seasoning and simmer again, until reduced by half. Pass through a fine sieve and add capers to the sauce. Simmer again for 5 minutes and add cold butter to it. Serve hot with your choice of meat.
