Capellini Pasta Recipes

Capellini is a type of Italian pasta, but is slightly thicker than the traditional pastas. Here are some simple but mouth-watering capellini pasta recipes that will surely increase your appetite.
Capellini Pasta Recipes
Pasta, as we know is a primary ingredient used in Italian cuisine. Being native to Italy, it has now become a staple food around the world. Pasta is formed from a dough which consists of flour, water and/or eggs. Though it can be prepared in different ways, it is usually served with sauce and seasoning. Pasta comes in different shapes and sizes like angel hair or capellini, fettuccini, fusilli, linguini, macaroni, spaghetti, etc. Capellini or angel hair pasta are long strands of pasta that are commonly used with light sauces. These strands can be broken into half and used in soups, salads and stir-fry meals. Following are some delicious capellini pasta recipes.

Capellini Primavera
Ingredients
  • 1 pound fresh angel hair pasta or capellini (cooked)
  • 1½ cups chopped onion
  • 12 ounces broccoli florets in 1-inch pieces
  • ¼ pound butter
  • ¾ cup julienned carrots
  • 1¼ cups thinly-sliced halved yellow squash
  • 1 tbsp beef bouillon granules
  • 1 tsp minced garlic
  • 8 ounces mushrooms (sliced)
  • 1¼ cups crushed tomatoes in puree
  • 1½ cups water
  • 1 tbsp fresh parsley (finely chopped)
  • ¼ tsp rosemary (grounded
  • ½ cup grated Parmesan cheese
  • 1/8 tsp crushed red pepper flakes
  • ½ tsp oregano
  • ¼ cup minced oil-pack sun-dried tomatoes
Directions

In an oven, melt the butter over medium heat and saute onions, carrots and broccoli for 5 minutes. Add mushrooms, squash, and garlic, and saute for 2 to 3 minutes. Now put the remaining ingredients in it and bring to a simmer. Cook for 10 to 12 minutes until all vegetables are tender and flavors are blended well. Serve over cooked capellini and sprinkle with cheese on it.

Meatballs With Capellini Ingredients

For Meatballs
  • 1 pound organic ground beef
  • 1 small shallot (minced)
  • 1 tbsp extra-virgin olive oil
  • 1 large clove garlic (chopped)
  • 1½ tbsp double concentrated tomato paste
  • ¼ cup heavy cream
  • ¼ cup Parmigiano-Reggiano (freshly grated)
  • 1 tbsp madeira wine
  • Kosher salt and fresh ground black pepper to taste
  • ½ cup fresh ciabatta bread crumbs
  • 1 egg
For Pasta
  • Capellini/angel hair pasta (cooked)
  • 2 tbsp butter
  • ¼ cup Parmesan cheese
  • 2 tbsp white truffle oil
  • 1 cup heavy cream
  • Kosher salt and fresh ground pepper
Directions

In a pan, saute shallot and garlic in the olive oil over medium heat. Allow it to cool and add all meatball ingredients and mix well. Using your hands, shape the meatballs and place on a sheet pan. In a preheated oven, bake the meatballs for 20 to 25 minutes at 350° F. Remove from the oven, and to keep them warm cover the meatballs with a foil. In a saucepan, melt the butter over high heat and add heavy cream. When the cream starts to boils and becomes thick, turn off the heat. Add cheese to the cream and softly mix the cream sauce and the truffle oil with the pasta; flavor with salt and pepper. To assemble, transfer a pile of pasta in the middle of the plate and put the meatballs around it. Garnish with small or torn oregano leaves and serve.

Capellini With Broccoli Cream Sauce
Ingredients
  • 10 oz capellini or coil vermicelli (cooked)
  • 1½ lb broccoli
  • ¼ tsp ground nutmeg
  • 6 tbsp butter
  • 2 cups freshly grated Parmesan cheese
  • 2 cups heavy cream
Directions

In a frying pan, over medium-high heat, add broccoli and ⅓ cup water. Cover and cook for 5 minutes and set the flowerets aside. Add cream and nutmeg to the pan; bring it to boil. Now reduce the heat and add cheese, stir well till the cheese melts. Remove from the heat and add pasta to the cream sauce. Toss the pasta until it gets completely coated with the sauce. Transfer the pasta onto a serving plate and add broccoli flowerets to it. Sprinkle the remaining Parmesan cheese over it and serve.
