  • Then add the remaining ingredients and let the salsa simmer for about 40 to 50 minutes.
  • Pour the hot salsa into the bottles, but leave about ½ inch head space.
  • Close the bottles and then seal them properly.
  • While you seal the bottles bring water to a boil in a pan and place the bottles in the boiling water for about 15 minutes.
  • Remove from water and place the bottles, where you want to store the salsa.

Ingredients
  • 24 cups Chopped Tomatoes
  • 2 cups Diced Jalapeno Peppers with Seeds
  • 2 cups Diced Bell Pepper
  • 2 cups Diced Onion
  • 6 cloves Garlic
  • 2 cups White Vinegar
  • 2 small cans Tomato Sauce
  • 1 tablespoon Canning Salt
Preparation
  • Pour the tomatoes and vinegar together in a sauce pan and bring it to a boil.
  • Reduce the heat and let the mixture simmer for about an hour, but do not forget to stir it.
  • Then add jalapeno peppers, bell peppers, garlic, canning salt and tomato sauce and let the salsa cook till the desired consistency reached, approximately for an hour.
  • Once the desired consistency has been reached, pour mixture into the jars.
  • Close the lids and seal the jars.
  • Place the jars in boiling bath for 15 to 20 minutes.
  • Remove from the hot bath and place the salsa bottles in a cool place.
