Ingredients
- 8 cups Fresh Tomatoes
- 2 cups Fresh Jalapeno Peppers
- ¼ cup Fresh Lemon Juice
- 2 cups Chopped Onion
- 8 cloves Garlic
- ½ cup Chopped Fresh Cilantro
- ¾ cup Cider Vinegar
- 1 tablespoon Salt
- Peel, core and chop the tomatoes.
- Then de-seed and chop jalapeno and mince garlic.
- In a sauce pan, place the tomatoes, jalapeno, onion, garlic and cider vinegar and bring it to a boil.
- Then add the remaining ingredients and let the salsa simmer for about 40 to 50 minutes.
- Pour the hot salsa into the bottles, but leave about ½ inch head space.
- Close the bottles and then seal them properly.
- While you seal the bottles bring water to a boil in a pan and place the bottles in the boiling water for about 15 minutes.
- Remove from water and place the bottles, where you want to store the salsa.

- 24 cups Chopped Tomatoes
- 2 cups Diced Jalapeno Peppers with Seeds
- 2 cups Diced Bell Pepper
- 2 cups Diced Onion
- 6 cloves Garlic
- 2 cups White Vinegar
- 2 small cans Tomato Sauce
- 1 tablespoon Canning Salt
- Pour the tomatoes and vinegar together in a sauce pan and bring it to a boil.
- Reduce the heat and let the mixture simmer for about an hour, but do not forget to stir it.
- Then add jalapeno peppers, bell peppers, garlic, canning salt and tomato sauce and let the salsa cook till the desired consistency reached, approximately for an hour.
- Once the desired consistency has been reached, pour mixture into the jars.
- Close the lids and seal the jars.
- Place the jars in boiling bath for 15 to 20 minutes.
- Remove from the hot bath and place the salsa bottles in a cool place.
