- 8 to 10 Roma tomatoes (halved lengthwise)
- 1 jalapeño pepper (halved lengthwise)

- ½ cup chopped onion
- 2 cloves garlic (minced)
- 2 tablespoons chopped cilantro
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lime juice
- ¼ teaspoon pepper
- ½ teaspoon fine-grain sea salt
- Salt as per taste
Preheat oven to 425° F and prepare a baking sheet by lining it with aluminum foil. In a saucepan, take tomatoes, peppers and garlic. To this, add olive oil and toss well to coat the vegetables with oil. Arrange these oiled ingredients in one layer in the baking sheet. Roast them in the oven for about 20 minutes, while checking in between to avoid over roasting. Remove the cooked vegetables and keep aside to cool down slightly.
When the roasted vegetables have cooled down to a lukewarm temperature, add them in a food processor along with cilantro, onion and lime juice. Blend this mixture until you get a consistently thick, chunky puree. If you think your roasted tomato salsa recipe is very thick, add more lemon juice (not excess). Ingredients
- 10 cups coarsely chopped tomato
- 5 cups seeded and chopped bell pepper
- 5 cups chopped onion
- 2½ cup seeded and chopped hot pepper
- 3 cloves garlic (minced)
- 2 tablespoons minced cilantro
- 1¼ cups apple cider vinegar
- 6 ounces tomato paste
- 3 teaspoons salt
In a large sauce pot, combine together all the ingredients excluding tomato paste - chopped tomato, bell pepper, onion, hot pepper, garlic, cilantro and vinegar. Turn on the gas burner and over high heat, bring the mixture to a boil. Reduce heat to medium low and simmer until you get the desired thickness. Remove sauce pot from heat and add tomato paste. Allow it to cool down before pouring in slightly warm canning jars. Place the jars in a hot water bath for 15 minutes and preserve them in refrigerator.
