Sweet potatoes can be grilled, fried, baked, steamed or boiled, and all these methods of cooking them enhance the potato's flavor. Sweet potatoes are enriched with vital nutrients; antioxidants. While you can't substitute a fresh vegetable, canned ones have their advantages. Sweet Potato Casserole
Ingredients for Casserole:
- Canned potatoes, drained, 3 cups
- White butter, ½ cup
- White sugar, ½ cup
- Eggs, 2
- Milk, ¼ cup
- Chopped nuts, ¼ cup
- Salt, 1 tsp
- Vanilla, 1 tsp
Ingredients for Crust:
- Flour, ½ cup
- Crushed nuts, ½ cup
- Brown sugar, ½ cup
- Softened butter, 1/3 cup
Drain the potatoes well and mash them. Fold in the beaten eggs, butter, salt, chopped nuts, sugar, milk and vanilla. Pour the mix in a greased baking dish. In another bowl, mix all ingredients for the crust or topping. Spoon it evenly on the top of the potato mix. Bake in a pre-heated oven to 350º F, until the crust seems crispy and appears golden brown.
Sweet Potato Pie
Ingredients:
- Canned potatoes, drained, 1 pound
- White sugar, 1 cup
- Softened butter, ½ cup
- Milk, ½ cup
- Eggs, 2
- Fresh chopped mixed herbs, 1 tsp
- Ground nutmeg, ¼ tsp
- Ground cinnamon, ¼ tsp
- Ground black cloves, ¼ tsp
- Vanilla extract, 1 tsp
- Unbaked pie crust, 1
Lightly break the can with your hand and set aside the potatoes in a bowl. Spoon in the butter and mix it well. Now stir in the milk, eggs, cinnamon, nutmeg, black cloves, fresh herbs and vanilla. Using an egg beater, beat the ingredients, until the consistency becomes smooth. Very carefully, pour the mashed potatoes into the unbaked pie crust and press the sides down. Bake in a preheated oven at 350º F, until inserted knife comes out clean. Serve pie warm.
Pork Roast and Sweet Potatoes
Ingredients:
- Canned potatoes, drained, 1 cup
- Boneless pork roast, ½ pound
- Thickly sliced green pepper, 1
- Thickly sliced mushrooms, ½ cup
- Grated ginger, ¼ tsp
- Ground cinnamon, ¼ tsp
- Ground nutmeg, ¼ tsp
- Cooking oil, 2 tbsp
- Fruit vinegar, ½ cup
- Brown sugar, 1 tbsp
- Salt and pepper, to taste
In a large heavy skillet heat oil. Brown the pork roast on all sides, and place it in a crock pot. Add green pepper slices, and all other ingredients except mushrooms and sweet potatoes. Cook for about a couple of hours, and then add in the canned potatoes and mushroom. Cook for another couple of hours until pork is cooked. Serve with a bowl of rice.
