Canned Salmon Salad

Salmon is one of the most nutritious food and with the availability of canned salmon, you can make a number of dishes. One of the most interesting dish is canned salmon salad and there are many variations of this salad.
Salmon is rich in omega 3 fatty acids and vitamin A and protein. This makes it one of the most valuable food products and it can be made into a number of dishes. If it is not possible to get fresh salmon for cooking, canned salmon is a great alternative. It is easily available in most supermarkets and it can be adapted to numerous dishes whether for breakfast, lunch or dinner. There are two types of canned salmon available, one is the red salmon and the other is the pink salmon. Pink salmon is less expensive, is milder in taste and works well for those recipes where salmon's taste is not an issue like soups and casseroles. Red salmon, on the other hand, is a bit expensive and is great for salad recipes.

Mediterranean Salmon Salad

Ingredients
  • ½ cup uncooked pasta
  • 2 cans red salmon
  • ¼ teaspoon dried oregano
  • ½ cup red pepper, chopped
  • 2 tablespoons feta cheese, crumbled
  • ¼ cup green onions, chopped
  • 1 cup baby spinach
  • ¼ teaspoon freshly ground black pepper
  • 3 tablespoons fresh lemon juice
  • 6 Kalamata olives, pitted and chopped fine
  • 2 tablespoons extra virgin olive oil
  • ¼ teaspoon salt
Method

Cook the pasta in boiling water and set it aside in a large bowl. Sprinkle the canned salmon with black pepper and oregano and flake the salmon with a fork. Combine the pasta with baby spinach, chopped red pepper, green onions, crumbled feta cheese, lemon juice, Kalamata olives, extra virgin olive oil and salt. Toss well and serve.

Easy Canned Salmon Salad

Ingredients
  • 2 cans red salmon
  • 6 gherkins
  • Juice of 1 lemon
  • 4 tablespoons capers
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh dill, chopped fine
  • ½ teaspoon white pepper
  • ½ teaspoon coarse sea salt
Method

Open the can of salmon and drain them from the liquid inside the can. Place them gently on a platter and arrange them in a single layer. In a medium-sized jar, add the freshly squeezed lime juice along with the extra virgin olive oil, sea salt and white pepper. Shake the jar so that the mixture is well combined. Pour this olive oil and lime dressing over the canned salmon arranged in the platter. Chop the gherkins into slender slices and toss them over the salmon along with the chopped capers. Serve this wonderful salmon salad sprinkled with chopped dill.

Quick Canned Salmon Salad

Ingredients
  • 2 cans red salmon
  • 2 tablespoons good quality mayonnaise
  • 2 tablespoons Greek yogurt
  • 6 lettuce leaves
  • 2 tablespoons capers
  • 1 cup celery, chopped
  • ¼ teaspoon freshly ground black pepper
Method

In a small bowl, combine the Greek yogurt, mayonnaise, chopped celery, capers and black pepper. In another bowl, flake the canned salmon with a fork. Now pour the yogurt and mayonnaise mixture over the salmon and toss until salmon is evenly coated. Serve the salmon on a bed of lettuce.

Avocado Canned Salmon Sandwich

Ingredients
  • 1 can salmon
  • 1 avocado, ripe
  • Juice of 1 small lime
  • 4 hamburger buns, split into two
  • 6 cheese slices
  • 1 teaspoon sesame seeds
Method

Peel the avocado and scoop out the flesh with a spoon. Sprinkle with half of the lime juice and set it aside. Drain the salmon from its juice and break it into small bite sized chunks. Take a hamburger bun and place some slices of avocado on it. Now place the salmon chunks over it and sprinkle with the remaining lime juice. Place cheese slices and the top half of the hamburger bun. Grill in a moderately hot oven for 10 minutes until the cheese starts to melt. Garnish with pickled gherkins and iceberg lettuce before serving.
