Candida Diet Recipes

Candidiasis is a medical condition developed due to uncontrolled growth of Candida cells. Here are some Candida diet recipes that would help in bringing this growth under control.
Candida is a type of micro organism containing toxic yeast cells and it thrives in various parts of the human body like intestine, throat, mouth and the genitals. The presence of these cells is usually normal and harmless, however when its growth multiplies, it becomes dangerous for the health of the person. This condition of the multiplication of yeast cells is called Candidiasis or yeast infection. The main causes of Candidiasis are overdose of antibiotics or a fragile immune system. The most common ailments that arise due to Candidiasis are muscle and joint pain, kidney and bladder infections, soar throat, infection on the skin folds, etc.

If you are diagnosed with Candidiasis or yeast infection, it is important to maintain a strict diet to bring the production of Candida cells in control. You have to follow a diet rich in proteins and low in carbohydrates. One should try avoiding refined foods, sugar, simple processed foods and trans-fats in his diet and include lots of vegetables, fish, chicken, beef, eggs, grains like rice, oat bran, and nuts, seeds and oils. Here are recipes of some dishes that you can relish, while following a Candida diet.

Vegetable-Chicken Stew

Ingredients
  • 16 ounces chicken breast
  • 3-4 medium sized carrots
  • 4-5 small potatoes
  • 1½ medium-sized onion
  • ¼ cup fat-free chicken broth
  • ½ teaspoon white pepper or as per taste
  • 2 tablespoons celery leaves
  • 2 teaspoons lemon juice
  • 2 tablespoons fresh parsley
  • 1 clove garlic
  • 1 teaspoon paprika
  • ½ teaspoon dried Italian seasoning
  • 5-6 celery stalks
  • salt - to taste
Preparation

Peel the skin of the chicken and cut it into cubes. In a large cooking pan, take ¾ cup chicken broth and cook the chicken pieces in it. Chop the garlic and celery leaves into small pieces and put them into the chicken broth along with paprika, Italian seasoning and white pepper. Cook with the lid on and simmer for 10-15 minutes. While this is getting cooked, chop the onion, potatoes, carrots into ½ inch pieces and add them into the pan with the chicken. Sprinkle some salt and stir for a few minutes and cook for 40-45 minutes with cover, on low flame. When the chicken and vegetables get cooked, pour in the lemon juice and top it with chopped parsley.

Fried Egg-Veggie Scramble

Ingredients
  • 4 eggs
  • 1 small onion
  • 1 tomato
  • 1 cup assorted vegetables
  • 2 tablespoons olive oil
    2 tablespoons green pepper
  • salt - as per taste
Preparation

Beat the eggs in a bowl and keep it aside. Cut the onion, tomato, green pepper and assorted vegetables into small pieces. Cook the assorted vegetable in a frying pan. Heat a non-stick pan, add onion and green pepper and fry it for 2-3 minutes on medium flame. Then add the tomato and salt along with the cooked vegetables and stir till tender. Pour in the beaten eggs and mix well. Continue stirring till the egg is fully cooked and serve hot.

Mix Noodle Soup

Ingredients
  • 4 ounces cooked chicken
  • 4 small carrots
  • 1 medium-sized yellow onion
  • 2 zucchini
  • 2 celery stalks
  • 2 oz very thin egg noodles
  • salt - as per taste
  • 6 cups chicken broth
  • ½ teaspoon ground pepper
  • 2 celery stalks
  • 2 tablespoons fresh parsley
Preparation

Cook the chicken broth in a large saucepan keeping it on medium or low flame. Meanwhile, chop the cooked chicken into cubes. Cut the carrots, zucchini and parsley into thin slices and chop onion and celery stalk into small pieces. When the chicken broth starts boiling, put in the vegetables and let it boil. Then add 1 tablespoon parsley and zucchini and after 8-10 minutes, put in the noodles and cook till it becomes tender. At the same time, add the cooked chicken pieces along with salt and pepper and stir well for 2-3 minutes. Garnish it with the left over parsley before serving hot.

When following a Candida diet, one should avoid foodstuffs made from yeast like mushrooms, beer, cheese and bread made with yeast. This diet has to be followed till the symptoms of Candidiasis subside completely and the production of the yeast is under control. One can include this diet in one's daily life to prevent Candidiasis from reappearing.
