The appetizing aroma of my grandma's cooking wafting through the kitchen area into my room always made me wish mealtimes would arrive earlier than usual. It was a fine summers day when I tasted something that was really out of this world. And today I wish to share some recipes to prepare that interesting food item I had eaten way back. I am talking about the deliciously light and fluffy buttermilk biscuits. Of course, when served with a lot of love, any dish tastes simply superb! Buttermilk Biscuit Recipe #1
Ingredients
Baking powder (2 teaspoons)
Baking soda (1/2 teaspoon)
All-purpose flour (2 cups)
Sugar (1 teaspoon)
Salt (1/2 teaspoon)
Buttermilk (1 cup)
Chilled butter - cut into 1/2-inch cubes (1/4 cup)
Ground black pepper (1/4 teaspoon)
Chopped chives (1/4 cup or 1/2 cup)
Fresh goat cheese - crumbled (One 5-ounce log)

Preparation:
Begin by lining 2 baking sheets with some parchment paper. Meanwhile, preheat the oven to 400° F. Then, take a large bowl and mix the following ingredients in it - baking powder, baking soda, flour and sugar. Also sprinkle some salt and pepper over this. Use your fingertips to rub the butter softly into the dry ingredients. Then, add the chives. Now, also add the cheese and buttermilk and blend the same till it forms sticky dough.

Place this dough on a separate surface and knead it gently and mold it into a thick one-inch round shaped form. Once you achieve the right consistency, cut this shape into 8 wedges. Brush some buttermilk over the surface. Once done, place these wedges ½ inch apart from each other on a large baking sheet. Do not grease this baking sheet. Place it in the oven and let it bake for 20 minutes. Cool it on the rack and serve it for teatime!

Buttermilk Biscuit Recipe #2
Ingredients
Baking powder (1 tablespoon)
Baking soda (2 teaspoons)
All-purpose flour (4 cups)
Salt (1 tablespoon)
Buttermilk (1-1/2 to 2 cups)
Vegetable shortening - cold (should be cut into 1/2-inch pieces - 1 cup)

Preparation
Mix the baking powder with flour, salt and baking soda and preheat the oven to 375° F. Cut the vegetable shortening with the help of a pastry blender. Blend it well and make a small depression in the center. Add 1-cup buttermilk in this space. The moment you transfer this buttermilk, fold the mixture together. This will result in sticky dough. You can now add more buttermilk depending upon the consistency you need for the dough.

Place the dough on a floured surface and fold it at least 4 times, overlapping the sides. This would help to create few layers. Then, press it firmly together and cut the same with the help of a biscuit cutter (3-inch). Place these biscuits on a cookie sheet and gently brush it with some buttermilk. Bake these biscuits for 20 minutes. Once it cools, serve immediately!
