Loved by all ages and all time favorite is egg salad Bruschetta with the traditional combination of egg salad with the crispy toast.
What you require?
1 baguette of sliced 1/2" pieces bruschetta toast or you get it readymade in market also.
For the Egg Salad, you will require:
4 medium sized eggs; 4 tablespoons of mayonnaise; 2 teaspoons of sweet pickle relish; 2 tablespoons of green onion (finely chopped); salt and freshly ground pepper according to taste; favorite edible green sliced olives (optional).
How are you going to prepare?
Preheat the oven up to 400º F. skirmish both sides of each slice of baguette toast with olive oil. Lay it on a baking sheet and make it bake about 4 to 5 minutes. Turn it around and again bake it for another 4 to 5 minutes until both sides of the toast are equally golden brown. Rest it to cool for some time.

Take a small sauce pan and fill with enough water to just cover eggs. Boil them fully on high flame then gradually slow down and cover. Make eggs to be cooked for at least 8 to 10 minutes. After some time take the eggs out, drain and immediately settle them for cooling under cold running water. Peel eggs and finely chop. Add mayonnaise, pickle relish, chopped onion, salt, and pepper.
