Traditional Japanese Sushi
Ingredients
- Sushi rice, 2 cups cooked
- Nori seaweed sheets, 4
- Fresh salmon, thinly sliced, 4 ounces raw

- Whipping cream, ½ cup
- Salt, ¼ tsp
- Pepper, 1/8 tsp
Mix cream butter and cream cheese in a small mixing bowl, add in flour and beat until well blended. Form 24 small balls, cover and refrigerate them for 1 hour. After an hour, press the cream cheese balls onto greased miniature muffins cups, on the bottom. Sprinkle rounded tsp of cheese and ½ tsp chillies into each shell, set aside. Take a bowl and beat eggs, salt, cream and pepper in it. Spoon this mixture into shells and bake for about 30 - 25 minutes at 350 degrees F, or until golden brown. Cheesecake Brownie
Ingredients
- Dark chocolate, roughly chopped, 200 g
- Plain flour, 110 g
- Eggs, 5
- Unsalted butter, 200 g
- Icing sugar, 250 g
- Cream cheese, 400 g
- Icing sugar, 150 g
- Vanilla extract, ½ tsp
- Whipping cream, 300 ml

- Raspberries, 150 g (plus extra to decorate)

Let cool completely and then cover and refrigerate for 2 hours or overnight.
For icing, beat 100 gm sugar, raspberries and cream until firm. Turn the brownie onto a board, also turn the cheesecake side up. Spread the topping over evenly and decorate with lots of raspberries.
