Secondly, the cook has to spend almost half the day in kitchen to cook breakfast for a crowd! Crowd Burger

Ingredients
  • Ground beef, 1 pound
  • Hamburger buns, 6
  • Processed cheese, 6 slices
  • Oil, 1 tbs
  • Dill pickle, finely chopped, 2 tbs
  • Catsup, 2 tbs
  • Onion, finely chopped, 2 tbs
  • Pepper, ½ tsp
  • Mustard, 1 tbs
  • Salt, 1 tsp
  • Aluminum foil
Process

Heat oil in a large skillet and saute beef in it, cook until crumbled. When cooked, drain the excessive fat and then season with salt and pepper, let cool. Add in onion, pickle and mustard, mix well, and then spoon onto bottom of the buns. Top the buns with cheese slice and wrap them in 10 inch square aluminum foil. Place them in crock and cook on low heat, covered for 3 - 4 hours or until well heated. You can even refrigerate these burgers until needed, before cooking them. Hot buns can be held on low for hours until serving.

Breakfast Casserole

Ingredients
  • Ciabatta bread, cut into 1 inch cubes, 8 ounces
  • Turkey breakfast sausage,1 pound
  • Large eggs, 2
  • Reduced-fat shredded sharp cheddar cheese,1 cup (4 ounces)
  • Fat-free milk, 1 ¼ cups
  • Egg substitute, 1 (8-ounce) carton
  • Chopped fresh parsley, 2 tbs
  • Chopped green onions, ½ cup
  • Cooking spray

This is an easy recipe for breakfast casserole. Preheat the oven to 400 degrees F. Place the bread cubes in a single layer on a baking sheet and heat for about 8 minutes in the preheated oven. Coat a medium skillet with cooking spray and heat it on medium heat. Cook the sausages in the heated skillet for about 6 minutes or until browned. Take a large bowl and onions, bread and sausages to it, set aside. In a medium bowl, mix eggs, egg substitute, cheese and milk with a whisk. Now combine the bread mixture and milk mixture, toss to coat the bread. Coat a 2 quart baking dish with cooking spray and spoon the mixture into it. Cover and refrigerate for about 8 hours or overnight. Next day, preheat the oven to 350 degrees F and bake the casserole in it for about 50 minutes or until set. Sprinkle with parsley and serve immediately.

Easy Pancakes

Ingredients
  • Old-fashioned rolled oats, 2 cups
  • Whole wheat flour, ½ cup
  • Buttermilk, 2 cups
  • Eggs, 2
  • All-purpose flour, ½ cup
  • Butter - melted, 2 tbs
  • Sugar, 2 tsp
  • Salt, 1 tsp
  • Baking powder, 1 ½ tsp
  • Baking soda, 1 ½ tsp
Process

The night before, combine buttermilk and oatmeal to form batter, cover and refrigerate this batter until the next day. Next morning, sift baking soda, sugar, baking powder, both flours and salt, set aside. Take a large mixing bowl and beat eggs in until frothy. Add the cooled butter, blend well and then add the oatmeal mixture. Blend this mixture quickly into the flour mixture. If the batter to thick, add 2 - 4 tbs of buttermilk, but not more than that. Fry the pancakes at 345 degrees on electric grill, use 1 tbs oil for each batch. Use a heaping tbs of batter for each homemade pancake, pat out each a bit. Serve immediately with warmed maple syrup.
