Yummy Cookie Recipe

Traditionally, black and white cookies are big with lots of icing over it. The following cookie recipe will yield you about 2 dozen huge cookies, about 60 medium-sized, or many many tiny, thin layered cookies.

Ingredients
  • 1½ cups milk
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ½ cup water
  • 1 ¾ cups granulated sugar
  • ½ teaspoon salt
  • ¼ teaspoon lemon extract
  • 2½ cups cake flour
  • 2½ cups all-purpose flour
  • 1 teaspoon light corn syrup
  • 1 - 2 tablespoons unsweetened cocoa
  • 1 cup unsalted butter (2 sticks), at room temperature
  • 4 cups confectioners' sugar
  • 4 large eggs
  • 3 oz unsweetened chocolate
Procedure

Step 1: Before we begin baking the cookies, preheat the oven at 375ºF. Take two baking sheets and spray them with some nonstick spray or place some parchment paper over it.

Step 2: In a large mixing bowl, whisk in the granulated sugar and unsalted butter. Take a hand blender and mix the ingredients properly till you get a fluffy consistency.

Step 3: Now add the eggs, milk, vanilla, and lemon extracts in with the sugar and butter blend. Mix everything properly till you get a smooth paste.

Step 4: Take another mixing bowl, sift the cake flour, all-purpose flour, baking powder, and salt. Stir the dry ingredients completely. Add this dry mix to the wet paste in the large bowl. Slowly add the flour mix in and keep stirring continuously.

Step 5: Use a regular soup spoon and take spoonful of dough, about 2 inches apart, to place in the baking sheets. Place the baking sheets in the oven and bake for about 18 to 20 minutes or till the edges of the cookies have turned slightly brown. Let it cook completely.

Step 6: Now in a small pot, boil a cup of water and add the confectioners' sugar in a large bowl. Slowly stir in enough boiling water with the confectioners' sugar to make it thick and spreadable. Make sure the frosting isn't too thin or else it won't stick to your cookies. If you can't use the entire contents of the boiling water, it is fine. Don't try to use it all.

Step 7: Spread this frosting on one half of every cookie. After all the cookie halves are coated properly, place the bowl of remaining frosting on a double boiler and let it simmer. Here you will stir in the unsweetened chocolate till it melts completely and then add the light corn syrup. While the chocolate is being double boiled, you will see that the color of the chocolate is light (not exactly perfect for this type of recipe). If such a situation arises, add a tablespoon of cocoa in with the melted chocolate. It will darken the color nicely.

Step 8: Now dip the cookies in the melted chocolate frosting. Hold each cookie with small tongs as you dip them and place it on a cookie rack to cool down. If your frosting is too dry, then and an extra teaspoon of hot water to the melted chocolate and then dip the cookies.

Step 9: Once the frosting is set, store them in an airtight container. The cookies stay fresh for few days, and they taste excellent the first couple of days.
