Beef is great raw material to have at hand, when you need to whip up a fast but wholesome meal. Here are some great beef recipes, quick and easy to make.

Beef Stroganoff
Ingredients
  • 284ml/10fl oz carton soured cream
  • 1 tbsp vegetable oil
  • 2 tbsp white wine vinegar
  • 1 large onion, sliced
  • 200ml/7fl oz beef stock
  • 250g/9oz chestnut mushrooms
  • 500g/1lb 2oz rump steak
  • 2 tbsp paprika, plus extra for sprinkling
  • 2 tbsp plain flour
Directions

Heat the large frying pan and melt butter in it. Add oil and once hot, put in onion slices and cook for 5 minutes until translucent. While onions are cooking, slice the beef into thin strips. Add salt, pepper and paprika to the flour, and lightly coat beef strips with it. Shake off any excess and carefully ease the beef into the pan. Cook for 3 to 4 minutes, until it starts to brown. Slice the mushrooms in half and add to the pan. Fry for a few minutes and then pour in the stock and vinegar. When the contents of the pan begin to boil, then reduce the heat, and simmer for about 5 minutes.

Add the sour cream to the pan and cook on low heat for 1 minute. Do not allow the mixture to boil, or it will curdle. Taste it to check, if it needs any salt. If perfect, pour it onto a bed of rice or noodles and season with a little extra paprika.

Beef Steak
Ingredients
  • 1 cup fresh basil leaves
  • 6 rib eye steaks
  • ½ cup chopped pistachios or cashews
  • Salt and pepper to taste
  • 1 tbsp. lemon juice
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 7 tbsp. butter, softened
Directions

Add all ingredients (except steaks) to a food processor or blender. Blend till you have a non lumpy mixture. Cover this mixture and chill. Then form it into a roll, 1" in diameter. After wrapping it in waxed paper, chill for up to 24 hours, until firm. If you want to store it for longer, freeze the mixture.

Heat the grill and brush with butter. Grill steaks 6" above medium coals and keep turning with tongs, until it is cooked to desired doneness. Allow the steak to sit for about 5 minutes, before serving. Transfer it to a serving dish and place on it a slice of the chilled mixture.

Beef Skillet Meal
Ingredients
  • ½ to 1 pound lean ground beef
  • 1½ cups water
  • 1 cup onion, chopped
  • 1 cup uncooked rice
  • 1 cup chopped celery
  • 2 small carrots, diced
  • 1 cup green pepper, cubed
  • 1 cup frozen peas
  • 3½ cups tomatoes, diced
  • ¼ tsp paprika
  • ¼ tsp salt
  • ½ tsp black pepper
Directions

Cook the ground beef in a skillet until brown and drain off the excess fat. Put in the rest of the ingredients and stir. Cover the skillet and bring the mixture to a boil. Lower heat and simmer for 35 to 40 minutes. Serve with rice.
