Jerky is any type of meat that has been cut into thin strips devoid of fat, marinated and then dried over low heat, so as to create a perfect snack that can be preserved without refrigeration. To be precise, jerky was created as a form of preservation. Jerky is a word that comes from the Quechua term Charqui, which literally means dried meat.

How to make beef jerky

Here is a simple method to make beef jerky:

Ingredients:
  • Flank Steak – 2 pounds.
  • Worcestershire sauce – 2/3 cup.
  • Soy sauce – 2/3 cup.
  • Honey – 1 tablespoon.
  • Black pepper, ground – 2 teaspoons.
  • Onion powder – 2 teaspoons.
  • Liquid smoke – 1 teaspoon.
  • Red pepper flakes – 1 teaspoon.
Special equipments that you will require are:
  • Box fan.
  • Paper air conditioning filters – 4.
  • Bungee cords – 2.
Method:
  • Take the flank steak and trim and remove all and any excess fat. Place these pieces of steak in a air-tight bag and freeze for 2 hours so that they are nice and firm.
  • After the steaks are nice and firm from refrigeration, slice the meat thinly into long strips.
  • Now take these strips and place them in a large mixing bowl, and to this add all the ingredients and mix properly. Use your hands to do the mixing so that all the ingredients are evenly spread.
  • Next place all the marinated strips in an airtight zip lock bag and refrigerate for another 6 hours.
  • After the refrigeration period, take the strips out of the bag and pat dry.
  • Next you will need to evenly place these strips on 3 air filters and then stacking these filters on top of each other. Put the remaining air filter paper on top of the last layer.
  • Take the box fan and put it on its side and put the filters on top of it. Tie these together with the bungee cords. Now put the fan back in its upright position and set it to medium and allow the meat to dry for at least 12 hours.
  • After this is done, store the strips in a cool and dry place in a container for 3 months.
Spicy beef jerky recipe
Here is a recipe that is great for those who like to spice things up.
Ingredients:
  • London broiled beef or flank steaks – 2 pounds.
  • Dry red wine – 1 cup.
  • Soy Sauce – ½ cup.
  • Worcestershire sauce – 1 cup.
  • Red Wine Vinegar – ½ cup.
  • Garlic cloves, mashed – 4.
  • Jar red chili sauce – 1.
Preparation:
  • Place the steaks in the freezer for an hour and a half, so that they are firm and makes for easier slicing. But remember not to freeze the steaks.
  • Next cut the steaks into diagonal slices of a quarter of an inch thick.
  • Put these slices on a glass baking dish or enamel baking dish.
  • In a large mixing bowl, make a marinade of red wine, soy sauce, Worcestershire sauce, vinegar, chili cause and garlic and mix well.
  • Pour this marinade over the meat slices and mix well.
  • Refrigerate this for about 4 hours or if time permits overnight. Remember to keep turning in between to marinade all sides equally.
  • After the refrigeration, remove the meat from the fridge and place on a dry plate. Using absorbent paper towels pat it dry.
  • Now place these slices in a single layer on wire racks and place these racks on foiled baking sheets.
  • Place it in the oven at 175 degrees C for 3 hours so that they are dark but still flexible.
  • Keep a close watch so that the meat doesn’t get charred.
  • After it is done, remove it from the oven and let it cool off well.
  • Place it in an air-tight container and store for 2 months.
