Beef Bottom Round Roast

You must be definitely bored of having the same menu for dinner week after week. If you are looking for a new, yet authentic American recipe main dish for a meal, then you can try making bottom round beef roast. It is beef roast made from the upper part of a cow's leg. This recipe, though takes a longer time to make, is easy and filling. It is also economical and high in protein. There are two different ways of making this roast. Take a look at the following crock pot and oven recipes.

Cooking Bottom Round Roast in Crock Pot

Ingredients
  • Bottom round roast
  • 2 onions
  • Onion powder
  • Garlic powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste
Method of Preparation

Firstly, you need to clean the roast under running water and pat it dry. Next, heat olive oil in a skillet for 1 minute. Add the roast to the oil and turn it so that the oil is spread to all its parts. Keep it in the oil as long as each side of it browns. Now sprinkle salt and pepper over the beef, just while it is browning. Turn off heat and take the roast out of the skillet once all the sides have become brown. Now add water to the skillet and make a gravy of the oil, water and the loosened brown bits of beef.

Plug in the crock pot on low or high settings (depending on how fast you want the roast to be made. The low settings will take 7-9 hours; while it can be made in 4-5 hours in higher settings). Cut the onions in half and place at the bottom of the pot. Now place the roast inside the pot and pour the above made gravy on top of the roast. Sprinkle the roast with onion powder, garlic powder and salt and pepper until it is completely seasoned. Close the pot and cook for the desired duration. Take it out after the prescribed time and slice thinly and serve!

... in the Oven

Ingredients
  • ¾ lbs of round roast beef
  • 1 lg can of tomatoes
  • ½ teaspoon of oregano
  • A pinch of garlic powder
  • Salt and pepper to taste
Method of Preparation

Cut the beef in slices, each of ½ or ¼ inch thickness. Preheat the oven to 350 degrees F. Place the beef at the bottom of roasting pan and sprinkle some salt and pepper over it. Now pour the tomatoes over it and sprinkle the remaining salt, pepper and garlic powder. All the slices of beef should be seasoned completely. Keep the roasting pan in the oven and bake for 45-50 minutes. Take the pan out after prescribed time and serve hot.

An alternate method of bottom round roast recipe in the oven is to marinate the beef with your favorite sauce or dressing overnight and then bake it. For e.g., you can marinate the beef with Italian dressing and your preferred spices and keep it overnight. The next day, take it out of the refrigerator and keep at room temperature for 20-30 minutes and only then bake on 350 degrees F for 2 hours (for three and three quarter pound quantity).
