- Large red potatoes - 4
- Oregano - ¾ teaspoon

- Garlic - 2 cloves (minced)
- Pepper - ¼ teaspoon
- Salt - ¾ teaspoon
Rinse the potatoes well and pat dry. Keep the peel on and cut the potatoes into wedges. Take a bowl and combine all other ingredients. Toss the potato wedges with this mixture and spread them on a cookie sheet. Now top these wedges with ¼ cup of Parmesan cheese and bake at 425 degrees Fahrenheit, for around 25 to 30 minutes or till they turn golden brown in color.

Ingredients
- Large red potatoes - 2 pounds
- Chopped green onions - 2 tablespoons
- Skim milk - ½ cup
- Non-fat chicken broth - 1 tablespoon

- Garlic powder - ¼ teaspoon
Wash and dry the potatoes. Pierce them with fork and bake the potatoes for around 40 minutes (or till they get tender) in an oven that is preheated to 400 degrees Fahrenheit. Take out the potatoes and allow them to cool. Once cool, cut the potatoes into halves and remove the pulp and keep aside. Retain the cup-shaped potato shells for later use. Take a bowl and add all other ingredients, along with the potato pulp and mash them well. Now, take the potato shells and fill them with this mixture. Bake these shells in the oven that is preheated to 400 degrees Fahrenheit, for around 12 to 15 minutes or till they get browned. Serve these baked red potatoes with a garnish of chopped green onions.
Baking Red Potatoes in Microwave
Baking potatoes in a microwave will be helpful in saving the cooking time required by the oven. Wash and dry a large red potato, beforehand. Once done, remove the eyes and other bruised spots from it. Pierce the potato with fork, before placing them on a microwave safe dish. Place the dish in the microwave and cook on full power, for around five minutes. After that, remove the potato from the microwave and turn it over, before cooking for another five minutes. Once done, take out the potato and cut it in half. Mash the inner pulp, after adding the required amount of salt and pepper.
