Chicken Legs with Beans and Salsa
The oven-baked recipe with chicken breasts is one of my absolute favorite, because the recipe lets me combine tomato salsa and salsa verde. You can serve the chicken with rice which makes for a really delicious and hearty meal for your family.
Ingredients
- 4 chicken legs
- 4 chicken breasts, halves
- 2 cups chunky salsa
- 1½ cups of mixed Cheddar, Colby, and Monterey Jack cheese, shredded
- 1 canned black beans, rinsed
- 1 canned corns, drained
- 1 canned mild green chili peppers, chopped
- ¼ cup cilantro, chopped
- Salt and pepper for taste
Japanese Baked-Crispy Chicken Legs
The crispy chicken legs is a healthy alternative to plain old fried chicken. The taste is tantalizing and can be prepared anytime of the day. You can infuse this dish with a side salad or Miso soup.
Ingredients
- 10-12 chicken legs & thighs
- 8 scallions, thinly sliced
- 4 garlic cloves, crushed
- 2 tablespoons rice vinegar
- 2 tablespoons sweet red chili sauce
- 2 cups bread crumbs
- 2 tablespoons ginger, grated
- ¼ cup peanut oil
- ¼ cup sake
- ¼ cup soy sauce
- ¼ cup Hoisin sauce
- ¼ cup roasted peanuts, crushed
- Salt and pepper for taste
Hot Chicken Salad

- 10 oz. cream of chicken soup
- 3 hard-boiled eggs, chopped
- 1½ cup celery, sliced
- 1 tablespoon lemon juice
- 1 cup potato chips, crushed
- 1 cup onions
- Leftover chicken
- ½ cup chopped nuts (black walnuts or almonds)
- ¾ cup mayonnaise
- Salt and pepper for taste
