Baked Chicken Legs

Chicken Legs with Beans and Salsa

The oven-baked recipe with chicken breasts is one of my absolute favorite, because the recipe lets me combine tomato salsa and salsa verde. You can serve the chicken with rice which makes for a really delicious and hearty meal for your family.

Ingredients
  • 4 chicken legs
  • 4 chicken breasts, halves
  • 2 cups chunky salsa
  • 1½ cups of mixed Cheddar, Colby, and Monterey Jack cheese, shredded
  • 1 canned black beans, rinsed
  • 1 canned corns, drained
  • 1 canned mild green chili peppers, chopped
  • ¼ cup cilantro, chopped
  • Salt and pepper for taste
Preheat the oven at 350ºF and slightly grease a large casserole. After you wash and dry the chicken, sprinkle salt and pepper over it. In the casserole, combine corn, black beans, half of salsa and cilantro, and green chili peppers. Place the chicken breasts and legs on top of the mixture and spread the rest of the salsa and cilantro over it. Top it off with cheese and cover the casserole with foil. Your chicken legs will take about 25-30 minutes to cook. After half an hour, remove the cover and let it bake for another 10 minutes till the chicken gets tender and the cheese starts to turn brown.

Japanese Baked-Crispy Chicken Legs

The crispy chicken legs is a healthy alternative to plain old fried chicken. The taste is tantalizing and can be prepared anytime of the day. You can infuse this dish with a side salad or Miso soup.

Ingredients
  • 10-12 chicken legs & thighs
  • 8 scallions, thinly sliced
  • 4 garlic cloves, crushed
  • 2 tablespoons rice vinegar
  • 2 tablespoons sweet red chili sauce
  • 2 cups bread crumbs
  • 2 tablespoons ginger, grated
  • ¼ cup peanut oil
  • ¼ cup sake
  • ¼ cup soy sauce
  • ¼ cup Hoisin sauce
  • ¼ cup roasted peanuts, crushed
  • Salt and pepper for taste
To prepare the Hoisin sauce, whisk sweet red chili sauce, Hoisin sauce, 2 tablespoons of soy sauce, and vinegar in a small bowl. Preheat the oven at 375ºF and slightly grease the baking pan. After you wash and dry the chicken, take a big plastic bag and combine chicken, peanut oil, ginger, garlic, soy sauce, and half scallions. Take a bowl and mix bread crumbs, salt and pepper properly. Take the chicken pieces, coat all sides in the bread crumb mixture, and lay it on the baking pan. After the chicken is in the oven for 30-35 minutes, turn it over and bake for another 30-35 minutes. Once the chicken is cooked from all sides, place it on a serving platter and drizzle the Hoisin sauce over it. Sprinkle crushed peanuts and the rest of the scallions. Serve hot with your choice of salad.

Hot Chicken Salad

If you happen to have leftovers from the above mentioned recipes, here's a great way to incorporate them into a hot chicken legs salad.

Ingredients
  • 10 oz. cream of chicken soup
  • 3 hard-boiled eggs, chopped
  • 1½ cup celery, sliced
  • 1 tablespoon lemon juice
  • 1 cup potato chips, crushed
  • 1 cup onions
  • Leftover chicken
  • ½ cup chopped nuts (black walnuts or almonds)
  • ¾ cup mayonnaise
  • Salt and pepper for taste
Mix all the ingredients together in a baking dish and sprinkle a cup of crushed potato chips on top. Bake it in a 450º F oven for about 15 minutes. Serve hot.

Serve these savory chicken legs with salads, mashed potatoes, lemon rice, or spicy dips.
