  • 1 tbsp olive oil

Place foil in a roasting pan. Wash the chicken breast and dry with paper towels. Jab the pieces a few times with a fork, and then sprinkle it with salt and pepper. Use a sharp knife to make three cuts on the top of each chicken breast piece. Mix together the crushed tortilla chips, salsa and sour cream. Parmesan Baked Chicken Breasts

  • ¼ cup Parmesan cheese
  • 24 ounces chicken breast halved
  • ¼ tsp black pepper
  • 2 tsp garlic
  • 1/3 cup Italian seasoned breadcrumbs
  • 2 tbsp olive oil
  • ½ cup roasted tomato and garlic pasta sauce

Preheat oven to 425°F, and place a large baking sheet in it for 5 minutes. Mix together the Parmesan cheese, black pepper and Italian seasoned breadcrumbs. In a shallow glass dish, mix the garlic and olive oil, and microwave on high for 30 seconds. Once the oil is warm, dip the chicken in it and coat it with the breadcrumb mixture. Treat the baking pan to some cooking spray, and then place the chicken on it. Spritz some more cooking spray over the chicken. Bake at 425°F for 25 minutes or until golden and cooked through. Serve with pasta sauce.
