Baked Cauliflower Recipes
Cauliflower is an annual plant that belongs to species Brassica oleracea and family Brassicaceae. Being low in carbohydrates and fat, it is best for people who are on a weight-loss program. It helps preventing cancer in the body and acts as a best substitute for the starch containing vegetables. In fact, the low carb dieters use cauliflower as a fair substitute for potatoes due to its similar texture and taste. It can be boiled, roasted, steamed or eaten raw. While baking, the outer leaves and stalks of the cauliflower are usually discarded, leaving only the florets. Baked Whole Cauliflower

Ingredients
  • 1 large head cauliflower
  • 2 tbsp grated Parmesan cheese
  • 1/8 tsp garlic powder
  • ½ cup seasoned bread crumbs
  • ¼ cup margarine, melted
  • 1/8 tsp salt
  • 1 pinch dried oregano
  • 1 pinch red pepper flakes
Directions

Remove the outer leaves and stalk from the cauliflower and place its head into a steamer basket. Place the basket in a large pot, put one inch of water, cover with a lid and bring it to a boil over medium heat. Cook for 20 to 25 minutes or until it tenders. In a bowl, mix together the bread crumbs, Parmesan cheese and melted margarine. Flavor with garlic powder, salt, red pepper flakes, and oregano; mix well. Transfer the cauliflower onto a baking dish and coat with a breadcrumb mixture. Bake for 10 to 15 minutes at 375° F or until it turns golden-brown, and serve hot.

Broccoli Cauliflower Bake

Ingredients
  • Cauliflower
  • 3 tbsp canola oil
  • 1 pkg 2% milk sharp cheddar cheese
  • 2 tbsp flour
  • Broccoli
  • ¼ cup bread crumbs
  • 1 cup non-fat milk (skim)
Directions

Cut the broccoli and cauliflower into small pieces and put in a baking dish. Cover and heat in a microwave for 2 to 3 minutes. In a saucepan, put the oil and flour, and stir on low heat. Now pour milk and bring it to boil. Add cheese and stir continuously. As the cheese melts, pour the sauce over the broccoli and cauliflower. Sprinkle with bread crumbs and spray with cooking spray. Now bake for 30 minutes at 350° F and serve hot.

Cals Cauliflower Bake

Ingredients
  • Medium head of cauliflower (steamed for 20 minutes)
  • 4 pats or 4 tsp butter or margarine
  • 1 tbsp mayonnaise
  • ¼ cup grated cheddar
  • 2 tsp mustard
Directions

In a small bowl, mix the mayonnaise and mustard. Place the steamed cauliflower into a tight-fitting deep dish and spread the prepared mixture all over its top. Sprinkle with grated cheese and top with butter or margarine. Bake for 20 minutes at 350° F or until it turns brown, and serve hot.
