- 2 tablespoons rum flavoring
- ½ cup toasted pecans
To start the rum cake recipe from scratch, preheat oven to 325° F. Prepare a 10-inch Bundt pan by light greasing and flouring, and keep it aside. In a mixer bowl, add flour, brown sugar, granulated sugar, baking powder and salt. After mixing for 1-2 minutes, add butter to the mixture. Blend in a low setting, until the mixture turns into sand like granules. Take another mixing bowl, and whisk together milk, Bacardi rum and eggs. Pour this wet concoction in the bowl containing the flour mixture. Blend for 3 minutes over medium setting. By now, you will get a smooth and evenly thick batter. Stir in pecans and add batter in the baking pan. Bake in the preheated oven for about 55 minutes. When Bacardi cake is done, remove from oven and leave for cooling.
Coming to the preparation of the glaze, melt butter sticks in a thick saucepan over medium heat setting. Gently pour water from the sides and add sugar. Bring the mixture to a boiling temperature, and continue cooking for 4-5 minutes with constant stirring. Reduce heat and simmer for another 2 minutes. Remove glaze from heat and stir in rum flavoring. Prick the top of the rum cake several times and coat with glaze, covering from all sides. Allow it to absorb properly and apply glaze again before serving.
For the complementary sauce, take a thick saucepan and combine the ingredients - flour, sugar, salt and water. Mix well to remove flour clumps and then cook the mixture over low heat setting. Stir continuously, and cook until the mixture thickens. As you get a consistently smooth concoction, add butter and rum flavoring. Remove from heat and allow to cool down. Keep in the refrigerator for chilling. At the time of serving, stir in toasted pecans in the rum sauce and top over your cake.
Whether you serve with glaze or sauce, the taste of a Bacardi rum cake is delicious. Most cake lovers prefer the serving with drizzling glaze; while others crave for rum flavored sauce, just like the regular cake frosting.
