Mini Cheesy Frittatas

Ingredients
  • 16 eggs, large
  • 6 white mushrooms, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, sliced
  • 1 tablespoon chives, chopped
  • ½ cup Gruyere cheese, grated
  • Salt and black pepper, for taste
  • Vegetable oil cooking spray
Directions

Take 2 mini muffin tins (24 each) and spray with the vegetable oil cooking spray and keep them aside. Preheat the oven at 400ºF. In a bowl, whisk eggs and add chives, salt, and black pepper. Place zucchini, mushrooms, and peppers in all the muffin tins (in the same order). With a spoon, add the egg mixture on top, just shy of the rim. Sprinkle Gruyere cheese on top and place the tins inside the oven for about 8 - 10 minutes. When the frittatas are cooked properly and the cheese has turned golden brown, remove from the oven and serve. If you are making them ahead of time, reheat in a 325ºF heated oven.

Dates Wrapped w/ Bacon

Ingredients
  • 32 dates, pitted
  • 2 oz. dried apricots, cut into 32 strips
  • 2 oz. salted whole pistachios, shelled
  • 1 lb. lean bacon, thinly sliced and halved
Directions

Before we make the next appetizer, preheat the oven at 450ºF. Begin with stuffing the dates with pistachios and place them in a dish. In another plate, lay the bacon slices flat. Place the stuffed dates and then the apricot strips on top. Wrap the bacon slices and keep them in the refrigerator till you are ready to cook. To cook, place the bacon-wrapped dates on a baking sheet and into the oven for about 10 minutes. Turn them over and bake for another 8 minutes. Serve them with toothpicks.

Goat Cheese Crostini w/ Olive Tapenade

Ingredients
  • 5 tablespoons walnuts, chopped
  • 5 oz. goat cheese
  • 3 tablespoons thyme leaves
  • ¼ cup dried currants
  • ¾ cup tapenade, ready
  • Crostini
Directions

Take a small bowl to mix tapenade, walnuts, currants, and thyme leaves together. Take crostini and spread goat cheese and then the tapenade mixture on top. Serve to the guests.

Nacho Bar

Ingredients
  • Tortilla chips, mix of white, yellow, red and blue
  • Salsa, mild and spicy mixed
  • Sour cream, fresh
  • Guacamole, freshly made
  • Nacho cheese
  • Refried beans
  • Jalapeños, sliced
  • Onions and green peppers, chopped
  • Olives and tomatoes, chopped
  • Green onions, chopped
