Authentic Mexican Food Recipes

Pambazo
Pambazo is an authentic Mexican dish which is made from special bread dipped in guajillo pepper sauce and filled with ingredients like potatoes, refried beans and onions and garnished with lettuce, salsa , cream and queso fresco which is fresh cheese.
Ingredients
Bolillo bread
Finely chopped onion- 2
Finely sliced tomatoes - 5
Guacamole – 3 tablespoon

Preparation
First of all, cut the bolillo bread into halves and toast the bolillo halves on a frying pan so that it becomes crispy on both the sides. Spread both sides of the bread with some freshly made guacamole. Now add the onions and tomatoes on one half and spread refried beans and cheese on the other half. Now put the sandwich on the frying pan again and allow it to toast for a minute or two. Cut into pieces and serve with spicy salsa.
Chile Relleno
The name of the dish, chile rellenos literally "stuffed pepper" and is one of the most prominent dishes served in the authentic Mexican cuisine. Mexico is known for its wide variety of chilies starting from the Anahein, poblano or the pasilla chili peppers and hence has several chili recipes. This is the simplest and most authentic form of the authentic Mexican Chile Relleno and is very easy to make once you know how to make authentic Mexican style refried beans and guacamole.

Preparation
Cut open the chili peppers and seed them to create a clean cavity, which can be filled with the refried beans filling. Roast the Chili peppers just enough to make the flesh of the chilies soft enough. Do not over roast the chili peppers since they have to be further stuffed. Having roasted the chilies, make sure to remove the blackened skin that immediately comes off after the chilies have been roasted adequately. Now stuff the refried beans in the chili cavity to stuff the peppers completely. Serve hot with refreshing guacamole.
