Almond Milk Ice Cream Recipes
Homemade ice cream with almond milk can be prepared in different ways. You can replace regular milk with almond milk, in case, you have lactose intolerance. Homemade almond milk is always preferred to the store-bought ones. You can also avoid eggs and sugar and replace them with healthy alternatives, for preparing this ice cream.
Recipe 1
Ingredients
- Almond milk - 2.5 cups
- Egg yolks - 8
- Sugar - 1.25 cups
- Vanilla extract - 2 teaspoons
- Heavy cream - 1.5 cups
Start with heating almond milk and heavy cream in a sauce pan placed over medium heat. Once the mixture boils, cook at low temperature for a few minutes and remove from heat. In another bowl, beat the egg yolks and when it is half done, add sugar and whisk thoroughly. Once done, slowly add the almond milk-cream mixture to the egg-sugar mixture in small amounts. Make sure to stir constantly, so that the eggs do not get cooked with the hot milk. Once the whole milk is added, transfer the contents of the bowl to the sauce pan. Once again, place it on medium heat and cook till a temperature of 175° F is reached. Remove from heat and place the saucepan in an icebox so as to cool the contents as soon as possible. Add the vanilla extract and allow the mixture to cool below 40 degree Fahrenheit. If you have an almond milk ice cream maker, you can use it to churn this mixture. Otherwise, use the ice cream mixing bowl of the mixer and run it for at least 30 minutes. Once done, freeze this mixture, before serving, so that it gets the consistency of regular ice cream.

Ingredients
- Almond milk - 2 cups
- Sugar - ¾ cup
- Cubed peach - 2 cups
- Cornstarch - 1 tablespoon
- Gelatin - 2 teaspoons
- Water - 1 tablespoon
- Vanilla extract - 1 teaspoon
Take a pan and add the sugar and cubed peaches. Cook it till the peach cubes get soft and juicy. Once done, puree the contents and strain through a fine mesh strainer. Add the peach mixture to almond milk kept in a pot and cook the mixture on low heat. Mix cornstarch in a tablespoon of water and pour it to the pot. Cook the contents on low heat for a few minutes. Meanwhile, mix the gelatin in a tablespoon of water and keep aside. Now, remove the pot from heat and slowly blend in the gelatin, till it dissolves fully. After that, you have to add the vanilla essence and a pinch of salt and mix well, before chilling the mixture for the next two hours. After two hours, you have to churn this mixture in an ice cream maker and your almond milk ice cream is ready.

The following recipe requires two cups of almond milk (use unsweetened vanilla almond breeze), one cup of sugar substitute (your regular brand), ¼ cup raw cocoa powder, ½ teaspoon vanilla extract and ¼ teaspoon xanthan gum. In order to prepare this recipe, take half of the almond milk (one cup), sugar and cocoa in a pan and mix well. Cook over medium heat, till the mixture boils. Remove from heat and allow the contents to cool for a minute or two. Now, add the remaining almond milk and vanilla extract to the pan and pour the mixture to a blender. Run the blender for a minute, before transferring the mixture to an ice cream maker. Churn the mixture in the ice cream maker for around 30 minutes and once done, chill it and use.
