A whole lot of Sandwich…
Lets thank John Montagu, the fourth Earl of Sandwich. Now you know what I am talking about right? The man responsible for giving this essential element of food its name is the Earl of Sandwich, but do not think he is the one who created the sandwich. The sandwich was in fact popularized by the famous Rabbi Hillel the Elder, and since then there has been no looking back where the sandwich is concerned. With so many varieties and options, the sandwich only gets better. Here are some sandwich recipes that I think are unique and great as a snack or a meal…

Crabmeat Salad Sandwich
Ingredients:
  • Crabmeat, drained – 1 can of 8 ounces.
  • Sour cream – ¼ cup.
  • Celery, chopped – ¼ cup.
  • Salt – ¼ teaspoon.
  • Worcestershire sauce – ½ teaspoon.
  • Cucumber slices – 8.
  • Whole wheat bread slices – 8.
Preparation:
    Take a mixing bowl and to it add the drained crabmeat, sour cream, celery, salt and Worcestershire sauce and mix well. Start with spreading crabmeat salad mixture on the one slice of bread, top with 2 slices of cucumber and then top with another bread slice. Your sandwich is ready for you to enjoy.
Greek Tuna Salad Pockets
Ingredients:
  • Lemon juice, freshly squeezed – 2 tablespoons.
  • Extra virgin olive oil – 1 tablespoon.
  • Capers, small – 2 teaspoons.
  • Oregano leaves, crushed – 1 ½ teaspoon.
  • Garlic powder – ½ teaspoon.
  • Black pepper, coarsely ground – ½ teaspoon.
  • Albacore tuna in water – 1 can of 7 ounces.
  • Tomato, chopped – ½ cup.
  • Red onion, minced – ¼ cup.
  • Black olives, sliced – ¼ cup.
  • Feta cheese, crumbled – ¼ cup.
  • Pita breads of 8 inches each – 2.
  • Baby spinach leaves – 1 bunch.
Preparation:
    Take a bowl and to it add the lemon juice, olive oil, capers, oregano, garlic powder and pepper powder and mix well. Then add the tuna, tomatoes, red onions, olives and cheese and toss to coat well. Refrigerate for an hour. Next cut the pita bread in halves and line with spinach. Place the tuna salad mixture into the ‘pockets’ of the bread and serve.
Turkey Cinnamon Waldorf Sandwiches
Ingredients:
  • White turkey breast tenderloins, cooked and chopped – 1 ¼ cup.
  • Red apple, chopped – 1.
  • Celery, diced – ¼ cup.
  • Mayonnaise – 3 tablespoons.
  • Yogurt, plain – 2 tablespoons.
  • Walnuts, crushed – 2 tablespoons.
  • Raisins – 1 tablespoon.
  • Nutmeg, ground – 1/8 teaspoon.
  • Cinnamon, ground – 1/8 teaspoon.
  • Raisin bread – 8 slices.
  • Lettuce leaves – 4.
  • Cinnamon bread – 8 slices.
Preparation:
    Take a bowl and to it add the turkey, apple, celery, mayonnaise, yogurt, walnuts, raisins, nutmeg and cinnamon and mix well. Put this in the refrigerator for an hour and let it cool. Meanwhile toast the bread lightly in a toaster. Spread the mixture on 4 slices of bread, top with lettuce and the rest of the bread.
Creole Chicken Salad Sandwich
Ingredients:
  • Mayonnaise – 1/3 cup.
  • Jalapeno pepper sauce – ½ teaspoon.
  • Thyme leaves, dried and crushed – ½ teaspoon.
  • Black pepper – ¼ teaspoon.
  • Breaded chicken patties, cooked and chopped – 10 ounces.
  • Celery, chopped – ½ cup.
  • Green peppers, chopped – ½ cup.
  • Tomatoes, chopped – ½ cup.
  • Kaiser rolls, partially split – 4.
  • Lettuce leaves – 4.
Preparation:
    Take a large bowl, to it add the salad dressing, pepper sauce, thyme, and pepper and mix well. Next add the chicken, celery, peppers and tomatoes and mix to coat well. Fill the bread rolls with this mixture and top with lettuce leaves and serve.
