4 Delicious Pound Cake Recipes

Pound cake is a delicious dessert everyone looks forward to. Here are four of my favorite pound cake recipes. Each recipe results in a delicious cake you will be pleased to serve.

Pumpkin Pound Cake

Ingredients:

1 1/8 cups shortening
1 1/4 cups white sugar
1 cup packed brown sugar
4 eggs
2 cups canned or cooked pumpkin
3 cups all-purpose flour
3 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1/2 cup chopped nuts

Sauce: (optional)

1 cup sugar
2 tablespoons cornstarch
1 1/3 cups water
3 tablespoons butter, softened
3/4 teaspoon rum or maple extract

Preparation:

1. Preheat oven to 350 degrees F. Grease and lightly flour a 10 inch tube pan.

2. In a large mixing bowl, cream shortening and sugars. Add eggs, beating well after adding each egg. Beat in pumpkin. Set aside.

3. Combine the flour, cinnamon, baking powder, baking soda, salt, nutmeg, allspice and ginger. Add dry ingredients to the creamed mixture. Stir until mixture is just combined. Stir in nuts. Beat well.

4. Pour into the prepared 10 inch tube pan. Bake at 350 degrees F for 60 minutes or toothpick test near the center comes out clean. Allow to cool for 10 minutes before removing from tube pan to a wire rack.

5. For sauce, combine sugar and cornstarch in a saucepan. Gradually stir in water. Bring to a boil over medium heat. Cook and stir for 2 to 3 minutes or until thickened. Remove from heat. Stir in butter and extract. Serve warm over cake.

Applesauce Pound Cake

Ingredients:

3 cups all-purpose flour
3 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
4 eggs
2 cups white sugar
1 1/2 cups vegetable oil
2 cups applesauce
1 teaspoon vanilla extract

Preparation:

1. Preheat oven to 350 degrees F. Grease and flour a 10 inch tube pan.

2. In a large mixing bowl, sift together the flour, baking powder, baking soda, salt and cinnamon. Set aside.

3. In a small bowl, mix the eggs, oil, sugar, applesauce and vanilla.

3. Make a depression in the center of the dry ingredients and add the eggs, sugar, oil, applesauce and vanilla mixture. Stir together. Mix well and pour into the prepared tube pan.

4. Bake in preheated oven for 50 to 60 minutes, or toothpick test done near the center comes out clean. Allow to cool in pan for 10 minutes. Turn cake out onto a wire rack to cool.

Country Pound Cake

Ingredients:

3 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter, softened
1/2 cup shortening
2 2/3 cups white sugar
6 eggs
1 cup milk
1 1/2 teaspoons vanilla extract
1 teaspoon lemon extract
1/4 teaspoon almond extract

Preparation:

1. Preheat oven to 350 degrees F. Grease and flour a 10 inch tube pan.

2. Sift together the flour, baking powder and salt. Set aside.

3. In a large bowl, beat the butter, shortening, and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Add a small amount the flour mixture at a time, alternating with the milk, mixing well after each addition. Add the vanilla, lemon extract and almond extract. Beat well.

4. Pour batter into the prepared tube pan. Bake at 350 degrees for 1 hour 10 minutes, or until a toothpick inserted into the center of cake comes out clean. Allow cake to cool in the pan for 1 hour. Remove to a cake rack and cool completely. Dust with confectioners sugar, if desired.

Chocolate Pound Cake

Ingredients:

1 1/2 cups butter, softened
2 1/2 cups white sugar
6 eggs
2 teaspoons vanilla extract
2 teaspoons instant coffee
1 cup milk
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1 teaspoon salt

Preparation:

1. Preheat oven to 325 degrees F. Grease and flour a 10 inch tube pan. Dissolve coffee in 1/4 cup hot water. Set aside.

2. Mix together the flour, cocoa powder, baking powder, and salt. Set aside.

3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Stir in the vanilla, beat well. Beat in the flour mixture, alternating with the dissolved coffee and milk. Beat well. Pour cake batter into the prepared tube pan.

4. Bake at 325 degrees for 60 minutes or until toothpick tested near center comes out clean. Cool for 30 minutes before removing from pan to a wire rack. Allow to cool completely.
